Oh, I love crab cakes. As I live in California, I am used to having them made with Dungeness crab. Usually served with a salad, so the vinaigrette does double-duty. I would suggest a touch of Old Bay seasoning.

The best Blue Crabs make the best Crab cakes. Blue Crab Are up and down the Entire US East coast. However, The Chesapeake Bay Produces the Best due to the seasonal changes. As winter approaches the crabs build up fat stores. Making the meat even sweeter and more flavorful.

I'm from Baltimore, Maryland. The blue crabs there are phenomenal. It helps that the crab is steamed in beer and an Old Bay type seasoning. It's not bad elsewhere, it's just different. Some like them fried with bread crumbs, some like them broiled without them. Those look good.

Maryland Jumbo lump crab cake is the way to go. Regular crab cakes are fine but love the jumbo lump with minimal mayo, bread crumbs,. Need real old bay as well but just a touch since it's strong and you don't want to overpower the sweetness of the crab flesh. Broil rather than Fry as well.
Taste is subjective. To me, crab is one of the most overrated foods on earth. Its not bad, crab cakes are good, steamed crab legs with drawn butter are enjoyable. It's not bad mixed into a seafood boil. But it's not worth the price for what you get. If I spent as much on a steak as it would cost me to have a decent crab dinner, the steak dinner is going to be vastly more enjoyable.

Unless she saw them moving around on the kitchen floor. Once when we visited my grandparents when I was young, my granddad brought a bushel home from the harbor. They crawled/sided all around the kitchen floor. But they were boiled and tasted fine.
Crab cakes look great. I’m a big fan. We are about hour and a half from the shore (Atlantic Ocean). I grew up with my Dad and friends and neighbors going crabbing. They used to be in a bushel, live. Same day they caught them, they cooked them and being we were in an Italian neighborhood (grandparents from Italy) they were tossed in the red sauce and the spaghetti was cooked up too, crabs served on side. The taste of the crab sauce was phenomenal. It is different from crab cakes but both are so good. My husband’s grandparents were from England and were fishermen too. They lived in Jersey (we call it Jersey, but it’s the state of New Jersey. All we have to do is look back a little and we see our English roots. So interesting.

Glad you made clear you were not making American Style crab cakes. Here in Virginia, I make more of a Maryland Style. I use cracker crumbs, Old Bay (of course), celery leaves, dehydrated onion, mayo, an egg, salt and pepper. Serve with cocktail sauce, tartar sauce, and lemon. Maryland makes an outstanding crab cake. NC also does. Eastern Shore Va uses the Maryland recipe. But we have blue crabs.
I should also say that there are many styles of crab cakes in the US. Of the ones I have tasted, Maryland is best for me. But they taste different and are made differently in Louisiana. I imagine out in Oregon they are different too.
Celery leaves? That’s interesting. I have never heard of any type of recipe (I’m not referring to crabcakes because I have never made them) using celery leaves

Vicky, in Alaska we use king crab. It is delicious. And they are huge. KIng in size and king in taste in my humble opinion. Hell, they even made a very popular show about king crab fishing in the Bearing Sea off the coast of Alaska and how dangerous it can be. I have a lot of respect for your husband for of what he does. Crabbing is one of Washington State recreation activity. Just us fishing for Dungeness Crabs here is 1.5 million pounds . Then we have commercial crabbers getting 3 million and State Tribes get 3 million pounds. Their is Dungeness Crabs all over the state , the coast from Columbia River to Neah Bay and the waters of Puget Sound.
We used to put out cages every summer on Orcas Island. Just a vacation thing. I don't know jack about fish or fishing otherwise. The islands are so beautiful though.
I live in the eastern shore of Maryland and we do family crap pickings all the time. Below is a tradition recipe used most often. Some like to wet the white bread with milk. Old Bay Seasoning is a must!!!!! 1 pound lump Blue crabmeat 2 slices white bread, crusts trimmed 1 large egg, beaten 1 tablespoon Old Bay Seasoning 1 tablespoon mayonnaise 1 teaspoon Dijon-style prepared mustard 1 teaspoon Worcestershire sauce 2 tablespoons butter Directions, Place crab meat in a large bowl and remove any remaining shell pieces. Break bread into small pieces and add to crab meat. Add beaten egg, Old Bay seasoning, mayonnaise, mustard, and Worcestershire sauce to the bowl. Mix by hand to avoid overworking crab meat; you want to keep the lumps of meat as much as possible. Form lightly into 6 patties. Fry patties in hot butter until golden brown, about 4 minutes per side. There are several common dips. Most are romalads. We eat them without. It takes away form the flavor of the crab.
Was there old bay in there? If there was no Old Bay it wasn’t actually a crab cake. Google “best crab cakes in America” note all the references to Maryland? Only real cakes all have Old Bay.

Crab Cakes are hard to get right. As an American, you need to be on the East Coast or the Gulf to get good ones.
Used to rake mussels with my mum and auntie,my grandmother made seaweed bread that was quite delicious as well

Crabbing is one of Washington State recreation activity. Just us fishing for Dungeness Crabs here is 1.5 million pounds . Then we have commercial crabbers getting 3 million and State Tribes get 3 million pounds. Their is Dungeness Crabs all over the state , the coast from Columbia River to Neah Bay and the waters of Puget Sound.
Dungeness crab is common and excellent up and down the Pacific coast, from Alaska to California. The very best crab available!🦀
We used to put out cages every summer on Orcas Island. Just a vacation thing. I don't know jack about fish or fishing otherwise. The islands are so beautiful though.
I live in the eastern shore of Maryland and we do family crap pickings all the time. Below is a tradition recipe used most often. Some like to wet the white bread with milk. Old Bay Seasoning is a must!!!!!
1 pound lump Blue crabmeat
2 slices white bread, crusts trimmed
1 large egg, beaten
1 tablespoon Old Bay Seasoning
1 tablespoon mayonnaise
1 teaspoon Dijon-style prepared mustard
1 teaspoon Worcestershire sauce
2 tablespoons butter
Directions,
Place crab meat in a large bowl and remove any remaining shell pieces.
Break bread into small pieces and add to crab meat. Add beaten egg, Old Bay seasoning, mayonnaise, mustard, and Worcestershire sauce to the bowl. Mix by hand to avoid overworking crab meat; you want to keep the lumps of meat as much as possible. Form lightly into 6 patties.
Fry patties in hot butter until golden brown, about 4 minutes per side.
There are several common dips. Most are romalads. We eat them without. It takes away form the flavor of the crab.

Was there old bay in there? If there was no Old Bay it wasn’t actually a crab cake. Google “best crab cakes in America” note all the references to Maryland? Only real cakes all have Old Bay.

@@jishani1 Apparently you haven't heard. It's a global market. Old Bay can be purchased almost anywhere. And since you're here, I'm guessing you've heard of the internet. That being said, Old Bay is good, but it's essentially just seasoned salt.

I like to dip the crab cake in some sour cream + horseradish or I make a regular remoulade
Sour cream and horseradish sounds simple and good, I usually go with remoulade but will try your suggestion.
