- Watch as Popeyes vice president of operations Dwayne Fontenette allows a behind the scenes visit to one of the popular restaurants. Fontenette has been a Popeyes employee since he graduated high school 30 years ago.
My man said he started working at Popeyes in 84!! And he is now an executive of the company!! Go head bruh!!! 💪🏾🤟🏾👏🏾
Don’t tell me I’m not the only one who misread “in” as “at” and watched the whole video just to spot the 100-year old Popeyes exec.
I agree
To all the people talking about they need gloves. Gloves melt around fryers, so it is hard to use them. Also, by the Food and Beverage Administration, you are supposed to change gloves after 15 minutes of use and wash your hands for 16 seconds in between changes, pretty hard to when your slammed! And last, VERY many places you eat at, do not use gloves, and many of them are big time chef's, Ramsey, Puck, and all those big timers that own big time restaurants! They are however, are supposed to wash their hands often and in between touching foods.
Cajun Plaisance Yep. It’s being fried anyway
Those same people probably expect biscuit makers, bakers, and pastry chefs to wear gloves. 🤔
There are special made gloves that dosent melt
Cajun Plaisance well I also work at Popeyes. Even before the pandemic, gloves were and are mandatory, every piece of chicken we dropped we had gloves on. Again, even before the pandemic, we were required to wash our hands every 15 to 20 minutes, slammed or not. And if it does get busy. We stock. On a normal day we always drop small amount of pieces of chicken. 6-8 piece consistently, but when the rush comes we stock. 10 piece. That buys time to wash hands properly. No hate but it can be done. My co workers are very well trained to do all of it.
@@izaakmurillo3164 If you're washing your hands that much, then gloves aren't necessary. Clean gloves are the same as clean hands in terms of food safety.
Watching this to prepare for tomorrow cause I got hired on the spot for being a cook for my local popeyes so hopefully I can apply this there. WISH ME LUCK YALL.
good luck big bruh
sir is their chicken pressure fried?
How’s your job going!?? Wish you a lot of luck 🍀
I honestly don't think it would be that bad as long as the management is good just hope you get a good manager
Don't follow the cook bro. Inspection is gonna kick you out! His chicken throwing system is totally wrong
God I love Popeyes ❤️
Makeupby_haleygooch same!❤️
I got Popeye's on deck . wya lol
Haley Gooch damn you pretty
Haley Gooch I could tell
Ben Dover.
This man clearly had a vision and didn't let anything distract him.
He gave us a secret with the shortening, they fry the chicken in shortening, lard or beef tallow. The batter gives it sum of it flavor but it’s mostly the oil. That’s what gives u the signature taste
vegetable shortening?
I heard it was all fried in peanut oil.
People have allergies so I doubt it is peanut. Old southern cooks (black) always used Crisco for frying and baking. Chicken is crispy and pie crusts are flaky. Crisco was made with lard (animal fat). Later it was introduced as a vegetable shortening for more healthy cooking.
No. I work at popeyes and the seasoning is what gives it its flavor. Basically, what we do is we clean the raw chicken, throw it in a machine, and pour the seasoning in the machine. And it's either mild or spicy seasoning. Then put it in a big pan and put in the cooler. You're not too far off though, the oil makes the chicken tender and juicy.
@tthomas8906 guess what buddy, blacks didn't found Popeyes
Man this is wholesome. Thanks for sharing
Thanks for sharing this!
It's so nice to see people taking pride in their job.
Be Fr. Literally joined a few months ago and it’s gotten pretty fckin boring to do the same damn thing every single day, not to mention the fact that their paying me $10 an hour to run back and fourth. I much rather get a job in a gas station working the register and also making $10 an hour to do nothing.
Because it’s media day tf? You are very naive to believe NOLA POPEYES employe are prideful in their job.(your forgetting Popeyes is a franchised brand, not considering their bottom line)
This is the most friendliest and positive atmosphere Popeyes I’ve seen, big kudos to the owner. 👍🏽
Their spicy chicken is the best chicken ever. However many of their stores have slow service and seem to be poorly managed.
Yep. I went there 2 days ago and got some sandwiches. Took 40 minutes to get my food. Gotta love “ fast food”
Find a Bojangles!!!
Adam Moss well the fact that you said “sandwiches” should tell you why it’s busy. lines were created in the lobby going outside the restaurant AND drive through.
thats because how the higher managers treat the crew members
@@wilmabetty2496,
Wow.
Maybe they just don’t like white people??
I worked at Popeyes when I was in high school - seeing this video brings back so much memories.
After watching this video, I went ot the nearest popeyes and got myself a family meal bucket for me and my siblings 😋
His first job and now he owns one. Black excellence!
bruh he's the vice president of operations for the whole chain
@@johnadamczyk6213,
Now we know...
Why cant it just be excellence? Why do you have to put a race label on it?
@@rapinbatches
Because there is people out there who actively work to make sure black people don't own shit.
rapinbatches bc he said what he said you all always want to be included when a black person achieve success ! Go enjoy your privilege and let us celebrate this one
I started working at Popeyes in December and I love it!! My coworkers are great 💕 I ain't gonna lie though tired of making those darn sandwiches lol. I have customers come in and ask me "Do you y'all have those sandwiches that everybody fights over."
Jazi Phips be glad you’re in prep and not in batter fry
Do you know what what’s in the wet and dry mixtures
is the chicken marinated?
It's a secret. He did say not everyone is doing the whole process.
Where tf ARE THEIR GLOVES!!!???
Absolutely love me some Popeyes chicken. It’s a shame their service sucks and usually keeps me from going.
Laphandaw
Awesome guys, will have to check that location out.
He’s so right. Talking about your favorite Popeyes.
Mine is Camp Casey, South Korea
Thanks in a million. Great content. Awesome imagination. Grade: A++💥
When I worked at Popeyes in 88-95 We made biscuits from scratch Butter biscuit shortening and biscuit base. We had to let the pre mix set for 24hrs before we used it. But back than they was owned by Al Copeland, He also owned Church's Chicken.
Can I ask what oil you use?
@@zhibaniola6460prolly beef fat
2:45 classic fried chicken manager, just comes in and pokes the food without actually doing anything.. All jokes aside he looks like a nice guy. Just quality control.
I'm eating Popeyes mashed potatoes right now! The chicken tenders are the best, and blackened tenders are the best tenders!
I'm so glad this isn't the Popeyes that went viral with the roaches Cha Cha sliding across the chicken wings..
My man said he started working at Popeye's in 84 and he is now an executive of the company go head bruh
Your shelbyville location is one of the nastiest places I’ve ever worked SMDH
Bruh I work at Popeyes and it doesn’t take 3-4 people to run the kitchen 😂, I’m 17 and I run the whole kitchen area
Straight up started working there 2 weeks ago easiest shit of my life 💀
@@tokyiz2190 Oh hells naw bro, one kitchen member during dinner rush hard asf
As a former cook for KFC, Popeyes AND Churches I can say that cooks are a one man crew. We do the cooking, filtering and cleaning ourselves.
We all know that one guy from highschool who doesn’t want to accept that this man is their future
I work at Popeyes, and I always get free food! I do everything from seasoning, to cooking the chicken!
Do you ever get tired of eating it?
Do you know what is in the wet and dry mixture that are put on top of the chicken
Do they allow you to have lowcut beards?
@@justinfrazier3610 yes
@@Adamisgood24 Do u have any tips on how to make french fries at home like popeyes does? Do they batter them like they do they chicken, or do they soak them in oil or something because I just cant figure out how they make them! Been trying to copy for so long help meeee lol
Never tried Popeyes before but I really want to😩

Bruh, they cleaned that kitchen good before that interview
Love Popeyes!
I wish Popeyes was in Australia
Making that chicken with his bare hands, showing everyone how it’s done. I love Popeyes chicken 🍗
Man I always wondered why the spicy was so dark. Learned something new. Love that chicken from popeyes. Lol.
I could't understand him, can you tell me why ?
@@ok4698 He said the spicy grease turns darker because of the spicy seasonings. That's why the mild grease is lighter.
@@TeddyT6 oh , ok thank you..
Dwayne says a 100 cases of chicken a week.....😂😂😂. Yeah right. A whole lot more than that!
Amazing
So so good. Word!
my parents met at Popeyes Lousaina Kitchen home of best crispy chicken and biscuits I love Popeyes amazing I don't eat anymore.
IGrewup StillDeontefrombladensburg100 why not? great story
Interesting
punctuation man
I'm sorry you don't eat anymore
I think he died of starvation guys D:
I recently work at popeyes cleaning dishes mad tiring
You're not supposed to tap the excess flour off the chicken over the fryer, you do it into the gray plastic bucket (1:25).
lol good point
I had contacted from Popeyes this morning and I have interview tomorrow 11/12/2018. How is the interview before?
how did it go
She happy she in charge of the biscuits
Interview Popeyes this afternoon. Surely can’t be too difficult working there
Who else is eating Popeyes and watching this?
The Louisiana Popeyes chicken on Edison in pipeline this Has happened to me three times that I have ordered and paid and come home and find missing orders today again I ordered eight pieces of chicken tenders up on shrimp and two biscuits and once again come home check no biscuits this is the third time and when you call them they make you hold for 10 minutes and then in message says I’ll call again it’s really shit that they shortchanged you when you go there and you’re a customer first of all they tell you to wait but we will bring the food to you and after 10 minutes they bring the food and the order is not complete
me
Nice. What kind of Shortening is the 🍗 fried in?
That was great man, thanks for the insight and inside haha!
Just a question, how many cook work at a time?
you eva found out?
I'm about to apply
Little Nikki LOVED Popeyes.....and SO DO I!
I wish the Popeyes here in Victoria Texas did the same thing like these awesome people. Here, the chicken is super duper tiny overcooked and dried up especially the biscuits! Employees are rude some of them are. I have never seen such tiny chicken before the wings and legs. The taste is not the same anymore and the quality.
*LOVE DAT CHICKEN FROM POPEYES*
Very interesting
Is popeyes gravy Powderized ready mix?
I think my popeyes failed the health inspection where i live!
Yip big secret the cook didn’t even wear gloves that’s why it taste good😂😂😂😂
oil is 380 degrees nothing survives that
i know they change the oil but i mean why do u just let the floor go in the oil when u put the chicken inside the fryer instead of doing it at the flour bowl or whatever it is?
All the women that work at popeyes are mean as hell!! 😂
I just started working here I start Friday 🤣😇
Tish Sharay I hated working for them how is it for you now
Branndoe Branndoe lol omg I hate it lol
I'm working there Tuesday 👀
Tish Sharay I been working there for About 3 months now. My job is batter frier and it's easy af
Seiko I hate this Fucking job the one i work is unorganized I got so many burn marks I do it all at my job I’ve worked ever shift now
I'm love Popeyes so much thats my favorite restaurant ever they got the best chicken in the world I'm haven't had Popeyes in a while Popeyes that's my eating spot
Also at 2:29. In majority of the USA, a case of chicken breast or thighs(for industrial use) is 40lbs x 100(weekly)= 4,000lbs a week, which I feel for Popeyes might be an understatement but then again on a 4 week period, that ~16,000 pounds of chicken a month. Which by averages could be around ~3,000-5,000 chickens they cook and sell every month.
And we sold batter canjun fish and Shrimp.
i love this chicken.perfect.👍👍👍👍👍
Now that's how we do in the South💯💯💯TX...
This is why I love Popeyes chicken!
i have a question for any current or ex-popeyes employees
This the Popeyes I work at!😭
Is that the one in Kenner on Williams blvd?
I Love Popeyes Fried Chicken 🐔. I just had a bunch yesterday 😇😎Delicious
Just would like to know if Popeye's uses lactose milk in its preparation of cooking their fried chicken. Not answered here.
Maybe buttermilk
We use butter
We use buttermilk
I remember I worked at Popeyes for 2 years back in 2004. I was the main cook who worked the back ( frying, peeping the batter and chicken for myself for my shift. And I always hated when I seen other cooks at that store nattering chicken in batter that’s 70% water, just to save on product.. the chicken always came out looking and tasting like ISH!
what was in the batter 😭
@@tonyhernandez2972 The video just said nobody knows because they have two buildings making half of the seasonings each and then later get combined. The batter must just be delivered to the Popeyes locations already ready to dip the chicken in.
We need a employee like him 🙂 in Bengladesh 😮😮😮
I remember when I work there good while ago they put big cubes of beef Tallow in the friars I think that's what makes their breading so good!
I keep hearing it's pork lard. 🤔
@@poppyshoessp I saw it. In 2010 it was beef tallow said it on the box don't know if anybody substituted.
omg, I used to work in mac Donalds and during school hours it was a nightmare! if you can compare mardi grass with my island carnival parade which is super busy, working at popeyes during mardi grass must a nightmare!
This Popeyes look like it got good customer service lowkey
They're giving up some secrets!

White guy here. Ya’ll save any chicken for me? Love ❤️ Popeyes
Where is the dam gloves 🧤???????
Angella First Lady they aren’t touching the chicken after it is cooked so it doesn’t matter if they aren’t wearing gloves. U can touch the chicken raw all u want bc the bacteria gets rid of itself when it’s cooked

Anybody agree that the chicken was so much juicier and greasy years ago?
its cause they treat the employs like shi now
New Orleans has the best popeyes chicken ever
thank you Al Sharpton for the tour of popeyes!
it in fact IS the SHIZZZZZZNIT.
He didn't even stack the chicken after he battered it. Didn't drop it in the grease right and the gloves I use doesn't melt by the fryers. I wonder how many times they failed inspections.
NO GLOVES :O
Whats wrong with that? He washed
His hands
I’ve worked in fine dining restaurants where there are chefs cooking. No one uses gloves in the kitchen. They all wash their hands. This is not different here.
Good but high as hell
Hispanics in North Texas love some Popeyes! You better have my side of jalapeño's!!!!! 😂🤣
Does popeyes cook chicken by the batches or by the order.? I would imagine its diffult for the cook to keep track lol
Rhennie It depends. If we get a special order or if they want it fresh then it has to be by order. But usually we cook it in batches just so we can have stock for drive thru or people in the front.
Rhennie does each employee have different job duties?
Strange the one i was in was microwaving the chicken before it went in the fryer. Did you see comercial microwave ovens
A Popeyes is five minutes away from my house
Never tried it
Now I'm on my way
