    EGG RECIPES
    Poached Egg
    Preparation time 10 minutes
    Cooking time 10-12 minutes
    Serving 1
    Ingredients
    2 Eggs , अंडा
    Salt to taste , नमक स्वादानुसार
    2 heaped tbsp Apple cider vinegar , ऐपल सायडर व्हिनेगर
    For Toasted Bread
    2 Sliced Bread, cut in strips , ब्रेड
    1 heaped tbsp Butter , मक्खन
    1 Garlic clove, chopped , लहसुन
    1 Spring onion, chopped , प्याज पत्ता
    For Serving Poached Egg
    ½ cup Curd, beaten , दही
    Salt to taste , नमक स्वादानुसार
    ½ tsp Sugar , चीनी
    ¼ tsp Black pepper powder , काली मिर्च का पाउडर
    1 tsp Fried Onion , तला हुआ प्याज
    1 tsp Spring onion, chopped , प्याज पत्ता
    Toasted bread , भुना हुआ ब्रेड
    Few Mint leaves , पुदीने के पत्ते
    Few Coriander leaves , धनिया पत्ता
    1 tsp Chilli oil , चिली ऑयल
    Process
    In a kadai or deep pan add water, salt, apple cider vinegar and bring it to a boil.
    Meanwhile in two separate bowls crack the eggs and set aside.
    Once the water is boiling, turn down the heat and sewell the water around to create a vortex, now put the egg in the centre of the vortex and let it poach properly.
    Remove the egg onto a dry cloth or tissue paper. Similarly follow these steps for the rest of the eggs.
    For Toasting Bread
    In a hot pan add butter, bread and toss it properly.
    Now add chopped garlic, spring onion and continue toasting until golden brown from both sides. Set aside for further use.
    For Serving Poached Eggs
    Place poached eggs in a bowl and add the mixture of curd, salt and sugar.
    Then sprinkle black pepper powder, fried onion, spring onion, some toasted bread and finish it with mint leaves, coriander leaves and some chilli oil. Serving immediately.
    Scrambled Eggs
    Preparation time 5 minutes
    Cooking time 8-10 minutes
    Serving 1
    Ingredients
    3 Eggs , अंडा
    1 heaped tbsp Butter , मक्खन
    ½ cup Milk , दूध
    1 tbsp Butter , मक्खन
    Scorched Bread slice , भुनी हुई ब्रेड
    For Garnish
    Spring onion , प्याज पत्ता
    Black pepper powder , काली मिर्च का पाउडर
    Process
    In a bowl crack the eggs then mix them with butter and milk properly.
    Now add butter in a pan and place it on low heat then pour in the egg mixture and stir continuously in intervals until the consistency resembles lumpy flowy custard.
    Then serve in a scorched bread slice immediately and garnish with spring onion, black pepper powder.
    Akori / Bhurji
    Preparation time 10 minutes
    Cooking time 10-12 minutes
    Serving 1
    Ingredients
    1 medium Tomato, chopped , टमाटर
    2 medium Onion, chopped , प्याज
    1 tsp Ginger, chopped , अदरक
    1-2 fresh Green chillies, chopped , हरी मिर्च
    1 tbsp Butter , मक्खन
    1 tbsp Oil , तेल
    3 Eggs , अंडा
    Salt to taste , नमक स्वादानुसार
    ½ tsp Turmeric powder , हल्दी पाउडर
    ¼ tsp Degi Red chilli powder , देगी लाल मिर्च पाउडर
    Few Coriander & Mint leaves, chopped , धनिये और पुदीने के पत्ते
    For Serving
    Sliced bread , ब्रेड
    Process
    In a hot pan heat oil then add ginger, green chillies and saute for a few seconds.
    Now add onion and saute until translucent then add the tomatoes and cook them until soft.
    Add the salt, turmeric powder, degi red chilli powder and saute until the raw fragrance of turmeric powder goes away.
    Now add the egg and continue cooking until your desired consistency.
    Finish it with coriander & mint leaves and serve hot with sliced bread.
