Bill is my favourite as he actually uses the ingredients given to him in keeping to the spirit of the challenge. I get so annoyed at how often the other chefs use their own fancier ingredients.
They have stopped using their own fancier ingredient for months now since they have returned to filming in the studio. Many many moons ago the the chefs filmed from their house so they use the fancier stuff they already have.
Pro tip guys! Double bag your frostings, use 1 bag and the tip for a sleeve, put your frosting in a second bag, then you can take the other bag out and reload easier/cleaner/faster. This works for other things as well, not just frostings. As someone who during Easter has to make over 200 deviled eggs for the day, trust me.
I love Emily's determination and sense of humour, and Chef Bill is so kind, but poor Rose! Coaching everyone but never getting to taste the fruit of her labours. Any chance she can be invited to the tasting at the end of these videos?
I've been watching Epicurious content for a few years now, but I must say, Rosemary Trout is such a perfect awesome name for a food scientist lol Like, I wonder if she grew up around a family that was in the food similar careers so they named her that way or she just happened to fall into it coincidentally. It's AMAZING how sugar eggs flour butter can be combined to make so many different things. Emily's ingredients cupcake... The buttercream, the marbling, the sprinkle etc. Very nice.
I truly appreciate how these videos don’t become ‘amateur doesn’t use expensive ingredients properly and everyone is frustrated and nobody learns anything’. Not only do we get to see someone take something simple and make it just a bit nicer, but we also see a normal home cook dabble with fun crazy ingredients without being thrown completely into the dark

Baking is so hard so I give Emily prop for trying. Chef Bill was so nice cuz he didn;t give her a hard frosting like Italian buttercream or crazy pipping detail. He kept it pretty basic but make it so fancy at the same time which can be pretty hard.
Emily. The piping tip *can* actually go on the outside too. That's how you can easily switch between tips. Mind you, I personally hate using that method but it also wastes less frosting. Technically. :P

I've always used KA as well, but recently I've been trying Arrowhead Mills. I think it's just as good as KA, if not better. Unfortunately, along with being slightly more expensive, I found out AM is owned by a giant corporation, so I'll probably go back to KA. AM's yellow corn meal is fantastic as well, but agan, expensive.

The one thing I like about this series is it demonstrates how a pro's technique can play a huge role.

King Arthur's flour is the BEST flour for baking. It's the only flour I buy honestly. And Kerrygold butter is one of the best tasting butters ever🤤❤️
