  • Easy green bean recipe - A healthy vegetarian and vegan recipe! This vegetarian salad will get you excited to eat your greens. An easy salad recipe for vegetarian and vegan meals and meal prep. This delicious and crunchy green beans with easy salad dressing is one of the best salads I have ever made. Perfect healthy salad recipes for your busy week.

    ▶️ GREEN BEANS RECIPE INGREDIENTS: (3 servings approx.)
    For Blanching:
    8 to 10 cups of boiling water
    1 teaspoon salt
    400g FRENCH Green Beans or VERY TENDER Green Beans
    (French green beans (also called Haricots Verts) are slightly longer and skinnier than regular green beans. They are harvested earlier then regular green beans, so they are thought to be more tender and more flavorful.)
    60g / 1/2 Cup Red Onion
    55g / 1/2 Cup Toasted Walnut
    1 to 2 Tablespoon Parsley - finely chopped
    Salad Dressing:
    2+1/2 Tablespoon Olive Oil (Organic cold pressed Olive Oil)
    1 Tablespoon White Wine Vinegar
    1/2 Tablespoon Fresh Lemon Juice
    1 Teaspoon Dijon Mustard
    1 Clove of Garlic - minced
    1 Teaspoon Maple Syrup
    Salt to taste (I have added 1/2 Teaspoon of Pink Himalayan Salt)
    1/4 Teaspoon Black Pepper
    ▶️ METHOD:
    Bring a pot of water to a boil and add salt. Blanch the french green beans in salted boiling water for no longer than 2 to 3 minutes. Any longer in boiling water the beans will loose their texture and colour. We want the beans to be CRUNCHY and NOT MUSHY. It took me about 2 minutes.
    ✅👉 PLEASE NOTE: The blanching time depends on the quality of the beans. If the beans have been stored longer in the refrigeration, it may take longer to blanch so adjust accordingly.
    Also, if you plan to use regular green beans then ADJUST THE BLANCHING TIME ACCORDINGLY
    Once blanched, shock the beans in ice water for about 1 to 2 minutes or until it cools down completely. BUT DO NOT LEAVE IT IN WATER FOR TOO LONG otherwise the beans will soak up water. Drain it well and let it sit in the strainer to get rid of any excess water while you prepare the dressing.
    Toast the walnuts for 2 to 3 minutes switching between medium to medium-low heat. Then transfer it on to a plate and allow it to cool down. Once cooled roughly chop it.
    Add olive oil, white wine vinegar, lemon juice, dijon mustard, maple syrup, salt, black pepper to a bowl and whisk it until emulsified OR add the ingredients to a small jar, cover the lid and shake it well until well combined. Dab the beans dry with a clean kitchen towel, before adding the dressing. this will allow the dressing to coat the beans well. Add the dressing and toasted walnuts to the dressing and mix well. Sprinkle some finely chopped parsley and serve with your meal.
    ▶️ IMPORTANT TIPS:
    👉 USE FRENCH Green Beans or VERY TENDER Green Beans
    👉 FRENCH GREEN BEAN are basically very tender green beans. French green beans (also called Haricots Verts) are slightly longer and skinnier than regular green beans. They are harvested earlier then regular green beans, so they are thought to be more tender and more flavorful.

BUT DO NOT leave it in water for long otherwise the beans will soak water. Drain it well and then let it sit in the strainer to get rid of any excess water while you prepare the dressing
    👉 Make sure to dab the beans dry with a clean kitchen towel, before adding the dressing. this will allow the dressing to coat the beans well.

    The recipe looks delicious. Us Lebanese, we make green beans in a tomato sauce/olive oil base. We sauté some garlic, onion, fresh cilantro in some olive oil. Add the green Beans cut up. We add salt, pepper, tomato sauce and some water to let everything cook together. It’s delicious and you can eat it Cold or warm. Luke warm preferably. Great with pita bread or as a side with any meal or even with rice pilaf!

    I made this today. Added some shredded brussel sprouts too and everything was just perfect, we missed a good salad/side. Even my carnivore brother in law ate and said it was reallyy good 🎉❤

    Boil for only 3 min? UK beans need 20 min to get soft?Why do you cool it in ice?

      UK beans are a special breed. Cooling with ice keeps the green colour.

    Nice recepi! The nuts are surprising in it. Ill try it next time. Reminds me if our French family recepi. We also blanche/ pre boil the beans for 5-10 min. We add a bit of bicarbonate to the water to keep the green color. Then drain. Set aside. Then heat some olive oil , sliced red union. 2-3 min. Soften them. Then add the beans. Season with salt/ peper and grind a little fresh nutmeg. Medium heat for 5 min with 2- 3 spoons of water to create steam. Leave lit on it. Just before serving a few drops of white vinegar.mix. You can eat it hot or cold. 😊
