    The one piece of advice I have for folks is to keep an eye on the order of spices. You generally want to avoid add all the spice at one time. Indian cuisine is all about layering flavors. So you add one spice you cook for a bit, add the next ingredient and next spice etc. That what separates a good Indian dish from a meh one.

      The trick is to stir gently and give it time to let the flavours seep in (with the gas flame on sim). It doesn't matter whether you add them one by one or at the same time.

      @@ordi5497 yes I would have separated the ground spices and that's what I originally meant. The order depends on the dish.

      ok low bar jesus, way to devalue ACTUAL works of art like the Sistine Chapel, Mona Lisa, Hokusai's Great Wave, The Venus of Willendorf, the neolithic figurative paintings of the Chauvet-Pont d'Arc, the kitsch futurism sculptures of Jeff Koons, the abstract expressionism of Rothko & Stella.

    We're not necessarily vegetarian but would definitely eat this. I find as we're getting older, we eat less meat. Lots of reasons - price, environment, etc. but expanding into the veg world is really a positive step.

    I'm not a video editor or anything like that, just a keen appreciator of your beautiful videos. I especially appreciate the music blending in with the sound of cooking and the unhurried, loving way you work with your ingredients. I find it so calming 😊
    May l make a small suggestion? At parts like 2.10, slow down the video (instead of speeding it up) with your instructions to continue cooking for one to two minutes... The slow speed will actually give the visual impression of the one to two minutes or five minutes needed for the cooking. This in my humble opinion may achieve a more overall congruency/ harmony between music and visual. Thank you again for your good work and the effort you put into it. I am blessed, and may God continue to bless you as you use this Gift from Him.

    Beautiful. I especially liked the different options for serving it at the end. I love onions but for anyone who finds them a little too strong, soak them in cold water for 30 minutes or so, before using them. You’ll still get the lovely flavour and crunch but it takes away a lot of their 'bite'. I'm also thinking if there were any of those potatoes left, it would make a lovely samosa filling.

I noticed in the text you don't mention frying the cumin seeds before adding the onion. However having watched the video I remembered. Maybe I've misread it.     I've made aloo matar a few times now and I'm pretty good at it, but I never thought to put it in a wrap with greens. I'm definitely going to try this because you can cook a few servings but only use small portions at time this way, saving the rest for another meal.

      Hello TheOriginalArchie, a local Indian restaurant near me makes paneer kathi roll the same way, by replacing the alu matar mix with shahee paneer. The gravy from the shahee paneer then becomes a dipping sauce. Even falafel is made the same way, by adding fresh crunch from the vegetables salad spring mix. Creativity knows no bounds : )

      @@trehandeepa8251 Yes, and I will try to make the gravy for dipping. It is interesting how they bind together. Often times when I am making Mexican dishes, starting with onions, ghee and tomatoes...I am a reminded how similar they are to Eastern dishes, which make a base gravy in the same way. Keep in mind, I am from Irish American descent, so I have only learned this over the last 15 years, BUT I have learned a lot. So I thank you!
