I was born in Reims, I noticed two small errors, the Saint Remy basilica is in Romanesque style, not Gothic, Moët et Chandon champagne is in Epernay, not in Reims. Otherwise, you have presented our beautiful city very well, it is a very good summary, congratulations. One of my uncles was a stonemason, he worked all his life restoring the cathedral.
I leave for Paris and Reims in 2 days. So excited to visit. I hope we can visit several champagne houses(we did not book in advance, but want locals recommendations).
