Hey AWE, I have a a tuned S6 with reso delete. I like the sound of that track edition. Is it correct that the valves are removed? If I go to comfort/individual will it change anything?
Correct, no valves. All of the characteristics of the mode changes like idle, throttle response, crackles, shift points, etc will still be there as it's controlled by the ECU, .
It's a slightly different variant of the EA839, has an EPC (electric supercharger) where as the RS4/5 doesn't. Not sure if that really makes a difference with the exhaust sound though

Was the car in this demonstration tuned? any performance comparisons other than sound. it does sound beautiful though.

Negative, no valves. Engaging comfort mode paired with throttle control makes it pretty civil overall.
