I tried her enchilada sauce and I absolutely loved it and I made the tortitas big hit as well as the white Mexican rice. I'm so glad I found her it's been about 3 weeks. My husband's from Guadalajara so I learned it a lot from my mother-in-law but it's always good to have me recipes I'm excited to see if her tamale pie is like my mother's
I have been studying different tamale pie recipes and I think pouring enchilada sauce over the cornbread before topping with the meat knocks it out of the park. 5 Stars for your recipe!!! Excellent recipe!!!

My mom use to make it. She used tamale meat mixture (shreaded pork in red sauce) she made the tamale masa spread. Spread a layer of masa in the bottom then meat then topped the meat sauce and baked it. I was a child but I loved it.
Oh my gosh! Where have you been!! Finally someone who knows Tamale pie with cust on the bottom! I grew up in Texas, that is how I grew up with it, but now days everything has crust on top!!😢
Also please share your crust on the bottom 🙏 just not the same with it on top. The juices soaking in oh so good! Guess I could just do this in reverse , I Always love Rachel's recipes 😊

I made this last week for "Meatless Monday". Yes, I made it without the beef. I added more peppers in its place. It was fabulous! Your Enchilada sauce is the best. With all the amazing flavors we didn't miss the beef at all.
I was wondering about omitting beef, we r trying to eat less of that. thx for suggesting and to Rachel for recipe. I wonder how she makes her own chili pepper?? will have to search. ❤️🙏

Instead of "my Ron", I could just see her saying " my Henry", as she was so dedicated and in love with her husband. So glad I found you! I make big pots of chili with the coarse ground chuck that's thick and just seasoned with tomatoes and beef broth. This is a new way to handle chili leftovers for me now also. Thanks!

She was born and raised in California so I think she brought some Mexican with her to the East Coast while I was growing up! Of course I grew up on Italian cuisine most of the time but she was a really good cook and organized like you, Rachel....love it💕☕

This kitchen is a happier environment that your kitchen in Texas. Don’t get me wrong the Texas kitchen is beautiful but I like this kitchen better. By the way thank you for all your recipes they have really helped me feed my family different meals. And they have helped me understand my cooking better.
Rachael, I am a great grandmother & am still cooking although only for myself, I remember being about 20, a company made boxes of "tunnel cakes" and some main dishes. I found a "tamale pie" one, and they have long ago stop making those kits (they had everything except meat), but mine has me putting the corn bread mixture on top. I think this will come out better. So glad I found you! I make big pots of chili with the coarse ground chuck that's thick and just seasoned with tomatoes and beef broth. This is a new way to handle chili leftovers for me now also. Thanks!

Always yummy yum yum from me! 👍💕I am Italian/Irish and my Irish mother made tamale pie with black olives in it. She was born and raised in California so I think she brought some Mexican with her to the East Coast while I was growing up! Of course I grew up on Italian cuisine most of the time but she was a really good cook and organized like you, Rachel....love it💕☕

This kitchen is a happier environment that your kitchen in Texas. Don’t get me wrong the Texas kitchen is beautiful but I like this kitchen better.
By the way thank you for all your recipes they have really helped me feed my family different meals. And they have helped me understand my cooking better.
Rachael, I am a great grandmother & am still cooking although only for myself, I remember being about 20, a company made boxes of "tunnel cakes" and some main dishes. I found a "tamale pie" one, and they have long ago stop making those kits (they had everything except meat), but mine has me putting the corn bread mixture on top. I think this will come out better. Thank you & LOVE YA!!
