Cold Milky Kadayıf
Serving: 6-8
Difficulty: Easy
Preparation Time: 5 minutes
Cooking Time: 15 minutes
150g kadayıf, fresh or dry
1 cup + 2 tablespoon sugar
1 tablespoon butter
100 g raw pistachio, chunks
200 ml milk
200 ml cream
70 g white chocolate
Pour the milk and 1 cup sugar in a saucepan and heat. Turn the heat off when the sugar melts.
Tear the kadayıf apart in a bowl with your hands.
Heat the pan and partially melt the butter. When it's melted, pour it into the kadayıf, add 2 tablespoons of sugar and break them together.
Put half of the kadayıf on the hot pan, turn the heat on, add half of the pistachio. Cover the top with the rest of the kadayıf and shape with a spatula.
When the sugar in the milk melts, turn the heat off and pour the cream and add the white chocolate to cool down the şerbet.
Flip the kadayıf with a flat lid.
When the şerbet gets cold and the kadayıf is still hot, pour the şerbet into the pan. Kadayıf will soak the şerbet immediately.
You can eat this beauty hot but it will be better when it’s cold. Before serving, pour a little bit of cold milk and sprinkle the rest of the pistachio.

I've had something very similar in a Turkish restaurant in York in England. Very pleasant. especially after a huge mixed grill cooked by an enormous man over the coals. You know that you're not going to be disappointed when the cook is huge.

I have never seen angel hair pasta like that in the US. It comes like spagetti in a box. Straight not crinkly. This looks like Vermicelli to me and the east indians use it in their desserts. I have to look for this in the European store. Maybe, they have it.

This looks like the perfect dessert to veganize. You just have to swap out the milk/cream with coconut milk and get a bar of white vegan chocolate or just use alpro vanilla milk instead. I will definitely give this a try.

Kadayif is shredded filo dough. Refika, would cooked and well drained angel hair pasta work instead? Can the sauce be made ahead and chilled? It won't be a 15 minute recipe but would make a dessert to prep. ahead of time. This sounds amazing.
In India we have seviya dessert, many recipes and forms. Do check those out. I call it Indian kadaiyaf

Yes you can use any that you like. Color will change and taste will be less milky but if you prefere that go for it!
