Why in the world would you avoid the delicious chocolate "skin" like from cooked Jello pudding? That's the best part! I used to make the original pudding in a skillet, stick the pan briefly in the freezer, pull it out and roll off the skin and set it aside on a saucer, then stick the skillet in the refrigerator just long enough to create a new "skin," then pull the pan out and roll off the skin and put it on the saucer with the other roll and set the dish momentarily in the fridge. What was left in the skillet I'd scrape into a small mug and cover the top with a piece of foil and put the mug in the fridge for the next day. THEN, I'd pull out the saucer with the two luscious rolls of pudding and enjoy them right then and there! Was like cold, creamy candy! Will try this keto chocolate pudding. But what's with the liquidy texture shown in the video? I'd definitely have to use more gelatin. I just hope it doesn't taste like horrible instant chocolate pudding or bounce like some kind of chocolate-flavored gelatin.

Is a good idea to add a pinch of salt. I will add also a little bit of instant coffee
