  • How to make cauliflower rice, the recipe and why it’s good for you.
    You can also buy cauliflower rice from the supermarket, grate or chop your own, or use a regular food processor with an ‘S’ blade.
    Cauliflower rice is a great alternative, and can be useful if you are trying to manage your blood sugars, you want to eat more plants, you’re watching your weight, or you just fancy a change.
    Cauliflower is part of the cruciferous vegetable family, which means it also contains a number of plant compounds that can also be beneficial for our health.
    Other cruciferous, vegetables include Brussels sprouts, broccoli, kale, rocket, cabbage, radishes. We can identify them with their pungent, flavours and aromas.
    Cauliflower is rich in sulphorophane, glucosinolates and isothiocyates. Together, these plant compounds provide us with antioxidants, liver support, and may also play a crucial role in our detoxification of oestrogen.
    Sulphorophane is also thought to be a potent anti-carcinogen. Although not directly an antioxidant, sulphorophane can help to increase levels of super oxide dismutase (mSOD) and glutathione in the body, which are both powerful antioxidants.
    because of its role in oestrogen, detoxification and removal from the body, cruciferous, vegetables, are a fantastic addition to the diet at all stages of life, but especially around the perimenopause and week four of your menstrual cycle.
    Cauliflower ‘Pilau’ Rice
    Ingredients, serves 4
    1 head cauliflower, cut roughly into florets
    ½ teaspoon turmeric
    1 tablespoon olive oil
    ½ teaspoon salt
    Method
    1. Add the cauliflower, turmeric, oil and salt to a food processor and pulse or chop for around four to five seconds until it resembles rice. Alternatively grate using a normal kitchen grater.
    2. Pour into a large baking tray and spread evenly.
    3. Bake for 15 mins at 180°C until it is cooked through, but al dente. Take care not to let the edges catch.
