She is saying 2.5,2.6,3,8 etc It represents mmol/l - which is the concentration of lactate in the blood - around 4mmol/l is threshold but some have higher and lower lactate threshold than others but for the most part 4 is the number you’ll dictate your threshold HR / Power or pace at. (I’m not a doc, just a bike racer and runner and do some small time coaching 🤠)

My guess is measuring her lactate level.
Lactate measurement to see the level of intensity in her training at that moment.
Measuring lactate to see if the start is too fast (= lactate higher than planned according to threshold and vomax tests) etc
