Please forgive me if this is a dumb question... But why soak the onions in hot water for 5 minutes? Is it to reduce the "zing" of the red onions? Or make them softer? Or both?
I don't think it's a dumb question. It's good to ask if you want to learn something. Actually, socking onions in hot water reduce the sharpness and acidity of raw onions. Onion becomes soft and sweet.
