This is the first part of our #ChineseNewYear and we dive straight into a quintessential auspicious dish which is the chicken, symbolising “Good Fortune” and “Prosperity” - A must-have on every reunion dinner table.
Although "Poached Chicken" is more commonly served during this festive season, this year I’m breaking out of that and serving it roasted instead. So this is a Chinese Style Roasted Chicken, something so simple yet so technical to get right - beautiful skin, juicy and succulent breasts, packed with flavor.

Sherson Lian kicked off his TV career with (and still is!) hosting ‘5 Rencah 5 Rasa’ on TV3 Malaysia, a cooking show that has been on the air the past 10 years, with 24 seasons and 1500+ recipes and counting! Hainanese or Salted Chicken is similar. Marinate chicken with salt (Method: salt rub or soak in salt brime) 1 hour. I would perfer some chinese herb slices (Dong Kwai) slice the meat with knife and insert in several area . Steam chicken 30-50 min (I use Khind DB600) or foil the chicken ovenate. Individual Serving Cut ( 1 Thigh/ 1 Drumstick / Whole Leg), Quarter Cut, Half or Whole. As perfer you can also glaze some shaoxing wine (optional)

The only thing I would add is if you brine your chicken, you'll get an even juicier result.
