- Sharing with you guys something personal this week!! A dish I ate growing up as a kid that my mom would cook for the family, Ayam Pongteh (a Peranakan dish). It’s a hearty, savory, rich mildly sweet #Chickenstew that just comforts the soul!! Perfect with a bowl of hot #rice. Man, just typing this caption out for you guys makes my mouth water!! 😂😂😂
Anyway, I hope you guys give it a try, and your family will enjoy it as much as mine did.
Ingredients:
- 8 Shallots
- 8 cloves of Garlic
- Fermented bean paste (Taucu)
- Chicken
- Soy sauce
- Dark Caramel
- Water
- Potatoes
- Palm Sugar (Gula Melaka)
- Salt

Hi Sherson, I have used your mother’s chicken pongteh recipe for years. My french husband loved it. One of his favourite dishes. I put fresh shitake mushrooms, potatoes and some carrots. More vegetables!! Can you share more peranakan recipes please! Thank you!

As a peranakan descendant, this is definitely one of the staples in my kitchen. Yours and mine have 90% in common, also replacing bamboo shoots with potatoes, but I'll have dried mushroom, cinnamon stick and ginger slices added in..😊😊
Right!! I have never been to a peranakkan house where they didn’t serve me pongteh!! And it’s always my fav dish, and it’s always nice to see how different families add their own twist to this humble dish.

This chicken pongteh dish is very tempting & appetizing, not to mention eaten with hot white rice with the addition of sambal belacan, it really suits my taste. A very comforting dish that is sure to fill u up & give u the satisfaction of being able to cook for your beloved family.
Hi Chef, I'm Eurasian from Malacca, and we have pongteh too. Ours is with pork, potatoes and sengkuang/jicama. But essentially the same. Nice.

I've tried it but with little bit of spicyness will be good...
It look like something similar with Adobo (Philippines cuisine) I should try making both of em. 🤤
Looks similar but has a huge difference. Adobo is like the lazy version but pongteh takes effort and time.
Yeah. But worth to make both. 😁
Hahhahahah I wouldn’t say adobo is a lazy version but the biggest difference is the acidity and peppers in adobo coz it’s cooked with vinegar and loads of black pepper, where as a pongteh has more a savory sweet profile with the umami from the fermented beans and touch of gula melaka.
@@ShersonLianTVI agree they don't taste the same. I prefer pongteh ayam with potatoes.

I cook the same way and add a bit of coriander powder. Don't know whether is it right to add this.
Wow interesting, well I’ve always said this if you love it tastes no one can tell you it’s wrong. Food is very personal :)
There's another dish called 'sioh ge' that has coriander powder and asam paste added in. Just like pongteh, the bulk of the aromatics comes from tauchu and tonnes of shallots. Just my 2 cents 😁😁. But then again, every family has their own versions of so-called traditional dishes, tweaked to their liking 😉😉
What is dark caramel
I don't like pongteh with mushrooms. I only love potatoe and chicken pongteh. Maybe it has to do with the palate this dish that my mum instill in me since young.
Yea some people are religious about what they add in their pongteh, and this is what makes it special that every family has their own version making this heritage dish. And I hope more people continue to make it so we don’t loose it over time :)
