For anyone who wants t make this soup: There's no reason not to use the Broccoli stems as well. They taste just like the florets. You just have to peel the stem and chop it up finely.
No reason to waste it since you're gonna puree the whole thing anyway.

Thank you for your question. Instead of making a roux and adding 2 cups of milk, you could just add 2 cups of cream to thicken the soup. Let us know how it works for out for you.
My roux came out lumpy. I didn't notice it in the soup, but I don't think it was supposed to do that. The soup tasted pretty good though. I did use a leek instead of onion.

yeah, I followed this recipe loosely (I only had a little bit of broccoli (and used the stems)). It was really good and yes very easy (soup usually is anyway). I thought it tasted better than any cream of broccoli you'd get in a store for sure.

try cooking the florets sepreratly in boiling water . this will give your soup a brighter color . and strain the soup before serving

You could certainly use cream in place of roux :)
This is my long lost recipe I couldnt find. I used heavy cream at the end. How much would I add. Also I use frozen broccoli florets, how much would I use. I have been looking for this recipe for 10 years. Ty.

Thank god i didnt pour milk directly onto my soup coz the milk spoiled. Then I replace with double cream, add some nutmeg powder. It is the best soup ever.
If you'd like a dairy replacement in this soup use 1 cup of coconut cream and 1 cup of water. Yummy.

Thank you for your question, Althea. Because this soup has 2 cups of milk, we wouldn't recommend freezing it. Milk tends to not freeze and thaw well.

Rice or tapioca work, yes! My family has people with celiac who can't have wheat or corn and this is their best alternative! 😊

A potato masher will work. If you don't have that, you surely must have a FORK in the kitchen. It will take a bit of effort but if the broccoli has been cooked until tender a fork will work. The soup may be a bit more chunky but will still taste great. Blenders these days aren't very expensive. You don't need a $400 one. Look on Amazon. Should be able to find one for under $30.
This is the Kmart version of a GREAT broccoli soup. Why? You used MILK instead of HEAVY CREAM.

Feel free to add some salt if you like, hope_ Seasoning adjustments are always up to the cook.
If you buy chicken stock at the store, or use a concentrated stock base, it's usually pretty salty. When making chicken stock from scratch most people omit salt. So use common sense & season to taste.
Turned it off when celery, the Devil Weed, made its appearance.
I don't like celery either....so OMIT it. I substitute celery with Bok Choy in recipes....which I DO like.
There's no reason to add the chicken stock, you're masking the broccoli flavor by doing that.
