    Another idea to make the soup more hearty is to chop up the broccoli stalks, sauté them in olive oil and/or butter (you can also add a small onion and some baby peppers), put them in a blender with some of your liquid, blend well, then strain (or not) the mixture back into the soup. This makes it thicker and recovers the nutrients from the stalks that would have been thrown away. If it’s too thick, just mix in a little water.

    Dont waste money buying chopped broccoli. If you have time to make this recipe, you have time for 1 minute of chopping it yourself.

      I always get fresh broccoli. Only time I used frozen was when I had a big bag of it already in the freezer but the fresh is cheaper and better

    just made this soup with a few adjustments:
    first I used a frozen bag of brocolli, cauliflower, and carrot mix.
    then I diced half an onion and threw it in.
    I also added half milk, half heavy cream for the dairy part.
    I also seasoned with a big of garlic powder.
    soup is delicious, can't wait to eat it tonight.

    I made broccoli cheese Soep today... .. super delicious. I made mine a bit spicy by adding a little cayenne pepper in it.
    The healthy part is that I used rice flour instead of all purpose flour. And just a little butter. And added just 1 cup Gouda cheese.
    No Cheddar for me!!!!
    And a lot of broccoli 😋😋😋

    *Ingredients*
    2 heads broccoli
    Salted water (2 min boil)
    3/4 cup butter
    3/4 cup flour (Rue)
    9 cups chicken stock
    9 cups milk
    1 t salt
    1 1/2 t white pepper
    1.5lbs processed cheese
    3 cups shredded cheddar cheese
    About 18-24 servings

    Thanks for your question, Puneet Bsanti. If you don't have white pepper, you may substitute black pepper. White pepper is used in this soup so it blends into the creamy broth and you won't see little black specks. Add the pepper slowly and taste as you do so as not to add too much. Enjoy the soup!

    I made this tonight. It's just me, so I quartered the recipe and have enough left over to freeze for another meal. I also used Monterey Jack instead of shredded cheddar and I used more chicken broth than milk and it still turned out very creamy. Delicious! Also, a nice crusty baguette was the perfect complement.

      For 1 cup of soup that is quite a lot actually. You know, most people eat soup out of bowls that hold more than 1 cup. If you are having only a cup, then you are also having something else with it, like a sandwich or a main course meat. That is a lot of calories and fat... and especially sodium... for a side dish. I'm not knocking it, just saying that this is not a food you should imply is "light"... by anyone's definition. Just present it as what it is. A nice rich soup.
      Disclaimer, I am an american female of a normal, healthy weight. One cup would not be a satisfying meal to me.

    This recipe is for a HUGE crowd. I improvised and scaled it back and still had too much. The soup is delicious, very rich and creamy, I stuck to the recipe except for the chicken broth, I simply used milk in its place. If you looking for a good creamy soup and not so worried about the health aspects, try it out! Absolutely worth it

    To substitute cornstarch for flour, you would only need half of the amount used in this recipe. Basically half of 3/4, or 3/8. Hope that helps. :)

    I'm European and this looks delicious, but I would never call this 'light'. You've got butter, tons of cheese, milk. This is considered extremely fat where I come from.

    get rid of the white pepper and use real pepper, forget processed cheese, forget the chicken stock, use the water from the initial broccoli cook.

      White pepper is real pepper, and is a proper ingredient in this type of recipe. I agree with omitting the processed cheese (I used Monterey Jack along with the Cheddar). Chicken stock adds wonderful flavor to the soup.

    Hi, maryam shammo - You may omit the cheese in this recipe, but it won't have the same flavor or be as creamy, nor make the same quantity. Give it a try though, and adjust the seasonings to your taste.

    Please try broccoli and cheese wiz no lie when you heat that up, it provides a equisite taste and smooth feel. I grew up on that and it's the best cheese sauce I'm yet to make my own homemade.

    Doesn't make sense to boil the broccoli first rather than just cooking it in the chicken stock and the rest... U lose all that broccoli flavor in the water u boiled it in!

      +ravyn good Preserves the color if you boil it quickly first. Replace some of the chicken stock with the water from the broccoli boil would be my suggestion.

      I agree. The best stock for broccoli soup would be the water that the broccoli is blanched in. That's what I use anyway. Blanch or par boil is good for color, makes great stock. Use the stems for sure.

    Assuming you used a chicken bouillon to make the stock you also could've used the boiling water that you softened the broccoli with as the water for the chicken stock.

    Seen this video several times. Attempted the soup once but forgot the chicken broth so ended up using water. Next time I will remember the broth. Am I the only one that loves LOVE! the color or cooked broccoli. I never get tired of the color change broccoli takes when cooked.

    I keep seeing soup like this with processed cheese. If you are going to the trouble of making a roux for the soup, why don't you simply skip the nasty processed american cheese and use an ACTUAL cheese (as mild or pungent as you like) and take it a step further to a bechemel ... then add some cream cheese (or even some sodium citrate if you want to get really crazy) for that gooey texture if absolutely needed. In either case, I just don't understand ruining it with ONE AND A HALF POUNDS of processed cheese. My two cents.

      +Eyewanders Foto The beauty of cooking is that you can make the recipe whichever way suits your fucking fancy :). Don't like an ingredient? Omit it or replace it. It's real simple.
