1 pound ground beef
2 yellow squash
1 medium zucchini
1 onion
1 medium bell pepper
taco seasoning or cumin, garlic, chili powder, salt, pepper
14.5 ounce can diced tomatoes
1 small can green chilis
2 cups shredded cheese
1 1/2 cups crushed tortilla chips or fritos
350 oven 30 minutes uncovered

I'm Mexican and I approve this recipe! My mother does a similar dish without the beef.
Many years ago when I started our garden I had difficulty raising bell peppers. My neighbor and long time family friend gave me some advice. Sprinkle a ring of epsom salt around the pepper plant. Works like a charm!

@@cheesekake1841 I do not know if it works on other peppers. Green , red and yellow bell peppers are the only ones I have tried it with.

Dear Miss Lori, Ths recipe is absolute a great big winner! I made this tonight and my husband went wild for it. He had two huge helpings. Of course I make enough for a week. Might have to freeze some, but then again my husband loves leftovers. You are a darn good cook. Thank you so much for this recipe.
Mrs. Lori, I just wanted to tell you that I made this last night for my husband's and my dinner and it is a keeper! I used black beans in place of the corn and omitted the green peppers because my husband doesn't like them. Also, I used a homemade taco seasoning for the spices. We love yellow squash so thank you for another delicious recipe idea!

I Too Love how you cook. Raised here in Dallas, Tx with All Fresh Food from our gardens. My Favorite kind of meal so Yes, I Will be making this in a few days when the Heat goes down. We are going to have 103-105 temps this week. I don’t cook in the oven when it’s this hot. Lots of sandwiches, soups, salads, etc. Stay Cool in Arkansas. Thank you for this squash and zucchini recipe. Cooking with love and creativity is the best technique. Cast iron skillet is enduring and practical especially with the helper handle on this large pan. I'm hungry and it is only breakfast time where I live.

My family makes this a bit different - pinto beans instead of hamburger and we make up some cornbread batter and put it on the top. All the rest is pretty much the same. Watching this brought back memories of my dad throwing this together on a Saturday afternoon with all of us kids pitching in. It was one of our favorites that he supervised because we all got to help get the veggies together. Thanx for the memories!

You gave me the best idea! I made WAY too much meatloaf the other day and I think I'll take it, brown it a little with the Mexican spices, I have one large yellow squash and chopped peppers in the freezer, canned Mexican corn and fire roasted tomatoes! I'm on it lol. Thanks! That just looks toooo good! Oh and use crushed up Chili Cheese Fritos on top!

That looks so good! My family does that same concept. My mother once a week would have a "heddi mess" meal,that meant maybe a soup,with all the vegetables and part of a roast ,and a little bit of spaghetti and maybe a small meatloaf..all heated up separately, but served as a a heddi mess meal, just heat it up and eat what you want. Buffet Style, LOL

Awesome recipe, made a huge batch with two squash and two zucchini that my cast iron skillet wasn't big enough so put it in a 9 by 13 casserole pan. I need to buy a bigger cast iron skillet!! Love the recipe, had it for supper tonight and will take to work the next two days for lunch!! Love your videos and recipes!

I so enjoy watching you cook. This casserole looks delicious. I’m on the Weight watchers program so I’m going to lighten this up using lean ground turkey and low fat cheese.
You can’t beat homemade, from scratch food. My Grandmother used to make everything from scratch. She was a wonderful cook and lived in a small town in GA. This casserole looks awesome. Don’t feel bad about tossing the good pepper in the trash bowl, LOL, I ‘v done that myself so many times. Just a couple of week ago I peeled and sliced a mango, placed it in a bowl and a few minutes later accidentally tossed it in the trash can. LOL Been there, DONE that for sure! :)

I just wanted you to hand that plate to me right through the screen!! One time a co-worker and I stopped at a Mexican restaurant and we both ordered steak fajitas. They put just a small sprinkle of crispy fried bacon in those fajitas. WOW! Did it set off the flavor of everything else. I want to cook this and put some crispy bacon in it.
