  • Squash Dressing
    2 cups cooked Yellow Squash
    10-ounce package Frozen Seasoning Blend (chopped onion, celery, red and green bell pepper and parsley)
    1 stick Butter (8 tablespoons)
    1 Mexican Cornbread Mix (cooked according to package directions)
    2 Eggs
    10.5-ounce can Cream of Chicken Soup (undiluted)
    Slice squash and cover with water in saucepan. Add 1-1/2 teaspoons Salt. (can use yellow crookneck and zucchini combined). Boil until tender. Drain in a colander, mash and measure 2 cups.
    While squash is cooking bake the cornbread according to package directions. Cool and crumble. In a saucepan melt butter, add seasoning blend and sauté. Turn off heat and add the squash, cornbread, eggs and soup. Stir well to combine. Pour into a buttered baking casserole dish and bake at 350 degrees F for 20 - 25 minutes until firm. Freezes beautifully before cooking.

    I knew you were church of God, ever since I been watching your channel my spirit has connected with you and John. Listening to him pray he just has something deep down inside his soul, I feel the lord every time he prays. I am Pentecostal and grew up in church since I was born I am now 55 years old, and never have gotten tired of it, I am just working to make heaven my home someday. Been singing and playing piano for over 33 years. Wouldn’t take nothing for my journey now. I compare that old song to my time serving the lord. Got saved when I was 12 years old and started ministering when I was 19, and have saw many saved, baptized in the Holy Spirit and delivered and set free. You and John are such loving and giving people. You are my most favorite cooking channel to watch. I love your stories about the days of you growing up, and about your family. Keep sharing cause I love hearing them. God’s blessings upon you and John and your family. Asking the lord to richly bless your business, and bless everything you put your hands to.

You and John and just such talk, amazing people and I love seeing how that your entire videos are surround by God and ever time John prays it makes me cry, cause he prays such beautiful prayers. Don’t ever loss what you all have in taking time for your RUclips family I love watching your videos, love your cooking and I picture myself allot with my feet under your table with you and John having dinner lol. Cause you make some amazing dishes and things I love to eat. I have never been to Louisiana but have always want to vacation there.

    Live in Baton Rouge , my mom recipe for squash dressing was with more along the lines of a dirty rice ..then she would add the buttered cracker crumbs for toppng... I have never tried on with corn bread , will have to try it.

    I am making a half recipe of this tonight for dinner. I had a half a pan of cornbread left and some squash I needed to use. Just waiting on the squash to finish cooking then I'll put it all together. Can't wait to taste it!

    I make my squash casserole that way. Boil squash red bell pepper, carrots celery add freeze dried chives after draining & grated cheese then corn bread stuffing mix with cream of chicken, sour cream, cheese layer stuffing & squash then bake 375 for 30 minutes so good

    I love summer squash! Growing up, mama would pick squash blooms early morning (there is a way to tell male from female blooms) she would rinse then, let dry a bit and dip in cornmeal & fried them crispy….I made them a few times myself & they are so good…

    Great to see you❤ We make this quite often for weddings. I work part time for a cater. They love it here in the deep South with fried fish and shrimp.

    Oh my goodness Amy!! I made this today and it was so good. I didn't want to stop eating it. I may have a problem lol
    I didn't have the house blend so I just saute onions, celery and threw in a drained jar of pimento.

    Love your videos. I watched you make Brenda Gannts biscuits for the first time last night.
    My Mama use to make them just like that but i could never stick my fingers into that pan( its a texture thing) She made it look so easy but over the years she stop making them(she's 84)
    Then i watch your hubby make those big biscuits. My world they looked awesome.
    Love watching how kind you are to each other.
    I'm hoping to get some squash planted for the fall harvest

I have never heard of squash dressing though. Looks amazing!! It is also a very pretty dish when it comes out of the oven. I wish I knew Ms Pat. She sounds like an amazing lady of God and she knows where her joy comes from. My friend, Sandy, in Shreveport used to put a little bit of sugar in her cooked squash and her 2 little boys ate it away!     You said you have had the CorningWare piece forever. I still have pieces I got as a wedding present 50 something years ago.
    According to internet the older pieces are very valuable so hang on to yours. I’m 83 and still use mine so I’m for sure keeping them.

    I just saw a recipe from a lady and it was squash chicken n dressing. A one meal dish. I love cornbread n dressing so I’m going to try this!

      Look at allll that basil! I use to take an ice cube tray and put chopped fresh basil (any herb or combination) and fill with olive oil n freeze. Then put in ziploc an and you can take out a cube to sauté things with. You can even add garlic or whatever. I found it was a good way to preserve my basil and other herbs. Ive also made compound butter with my herbs and garlic etc. sauté with or spread in garlic bread etc .

    When the squash is prolific you can fill the blossoms with pimento cheese, close the blossoms ends after filling the blossoms, bread them, and fry them. They are wonderful. We made squash pickles out of large squash that we scraped the seeds out.

    I love yellow squash, anyway its fixed. I have a recipe my mom always fixed that I love to make, but my favorite is the recipe from The Pirates House in Savannah, GA. My mother& I enjoyed it soooo much we went back for seconds on their buffet, then bought their last cookbook to get the recipe. It's got dill in the sour cream! It makes it so yummy! I grow it in our garden too. Another thing when I precook it for casseroles I steam it by cooking in microwave using only a half teaspoon of water & a lid. That way all my nutrients stay in the squash instead of throwing out in the pot of water. I'm going to try your dressing recipe. Thx for sharing.

      @@amyslouisianakitchen recipe from The Pirates House in Savannah is 2 lbs yellow squash sliced, cooked, 2 tbsp butter, 3 green onions (prefer)sliced including greens or 1 small onion diced, 1/2 tsp dill weed, 1 tsp salt & pepper to taste. Mix, put in casserole dish & top with 1/2 cup course butter cracker crumbs tossed with 3 tbsp melted butter spread on top. Bake 30 min @350*. It taste so good, it's very light bc there is no cheese! Great side dish. Just a little dill but the flavor is awesome!

      @@amyslouisianakitchen our air quality this morning where I live in Collingwood which is 100 miles north of Toronto which pretty central is 9/10 we are on Georgian Bay which is on Lake Huron which is one of the Great Lakes further north is where it’s coming from. Sad all the devastation which is happening and yesterday we had a tornado just 10 min from here funny weather. You have a great day Miss Miss Thx for all you do on here 💜💜

    Seems like all the raw ingredients could be added to a casserole and cooked until the cornbread is done, bypassing all the prebaking and sauteing...squash takes no time to cook and the frozen veg would soften quickly as well. Sounds like a very good comfort dish. I love squash too!!

    Amy! Beautiful Garden! So I know you are in the South - how do you keep the squash bugs off your squash plants? I am trying a variety that is a little resistant. Georgia just has given my grief when I may get on squash per plant early on but then nothing. I did buy 4 squash so I will try this recipe! Turkeys on sale at Kroger!
