    pot pie for 2
    crust
    2 cups all purpose flour
    1 t. Salt
    1 stick cold butter
    4 to 6 T. cold water
    filling
    1 T.oil
    1/4 cup chopped onion
    1 minced garlic clove
    1 large chicken breast, cooked, chopped
    2 T. flour
    2 cups broth
    1 T. milk
    12 oz. mixed vegetables
    1 potato, cooked, cubed
    1 carrot cooked, cubed
    salt, pepper, thyme
    prebake bottom crust just a few minutes
    400 about 20 minutes or till brown on top
    apple Cobbler 🍎
    1 pint apple pie filling
    left over crust, little butter
    small baking container
    bake 375 till golden brown

    I absolutely LOVE the programs you do regarding cooking for two. I only cook for one, but the spare portion goes in the refrigerator for tomorrow, Or, in the freezer for down the road. Always perfect. Thanks for taking care of everyone in your community.

    That looks delicious! I always par boil my carrots and potatoes for 10 minutes then add them and frozen peas to my sauce. 🙂

    That supper looked fantastic, Miss Lori! :) I’m also cooking for two. And it really is hard to do when you’re used to cooking for a family, but this is a good one that I’m definitely going to make. I have a couple of those single serve crocks, and I absolutely love that your recipe has crust on the bottom too! Most people nowadays only do the top, but I think the crust is the best part, so I’m doing it this way. God give me the strength to make the cobbler too, because I know that tasted absolutely divine after that hearty pot pie.:) God Bless!🙏🏼👍🥧

    I spent years cooking for my family plus extras most nights ~ 5 - 9 people as a rule, and I grew up in a family of 6. Having learned and watched my mom feed our friends along with us, I just did the same with my three boys and their friends. Twenty years after my last son moved out I still haven't figured out how to 'cook for two'. Instead, I tend to make what I always have and divide it into individual freezer meals for us and my mother in love. Casseroles and soup work well for that. I also keep frozen mirepoix, bell peppers, onions, and various cooked meat on hand so I don't end up wasting fresh produce or a lot of meat wrapping supplies. I have quite a collection of freezer containers that I purchased from Lehman's (square so they stack and pack neatly). These work for just about everything except casseroles. Those I ended up buying fast food foil containers from a restaurant supply store. One is enough for a single meal for my husband and myself, and will feed my mom-in-love twice (like us, she doesn't mind leftovers, and actually prefers having what she had for supper the night before for lunch the next day). I still usually start out making enough to feed a large family, but I now portion it out for many smaller meals instead. Since I have SLE and RA, this also means on days when I can't cook we still eat good home cooked foods.

      Ms Lori thanks 4 sharing chicken pot pies are one of my favorite meals so lm loving this video! Peas, carrots & corn plus the onions and some garlic are perfect for me for my pie. I will be using bag of frozen vegs and one refrigerated pie crust, plus one cream soup as l am disabled now.❤❤❤

    Love these videos Miss Lori. I was just thinking about a chicken pot pie and this one looks delicious and perfect amount too, plus the dessert. What a treat. You reminded me of when my mom use to make quick meals on busy school nights she would make the chicken pot pie filling put it in the casserole dish and then top it with the biscuits then bake in the oven. Great memories and so good.

    It took me years after our 4 children grew up and moved out for me to learn to stop cooking for 6. 😂 My husband has since passed, but my youngest son moved back home, so I am enjoying your cooking for 2 recipes very much. Thanks for making them available! ❤️

      Yeah I know the feeling 😂 I have 4 grown men in the home, so I need to cook very large amounts. I’m always wondering in my mind, will I ever get to cook small portions, but I know it’s going to take some adjusting 😂😂😂😂 But I cook so much that if I cook for a couple of days, we have some leftovers for a few days and I can get other things done.

    Love this recipe and that it’s for 2 people. I made chicken pot pie a couple of days ago, had two little potatoes so added them to the mix… even made my own pie crust. Really enjoy all your recipes and the ones I’ve made have been a hit with my picky eater husband.

    I always grin like a proud mama when the kiddlet youtubers (the late 30s early 40s) discover what great meals they can make from their pantries as their skills, confidence and stocks grow. Between it COVID and current inflation, very positive choices are being made in so many homes. You are certainly someone who has helped them make those changes without fear.
    Going to try to eat a portion of chicken pot pie I've had in the freezer (in FoodSaver bag) for lunch tomorrow I make mine usually in 6" pyrex pie dish. This time a big pie plate and froze individual portions.

    I love all the cooking for two recipes. One year my husband had to work Thanksgiving day so I set out to make Thanksgiving for 2 without tons of leftovers. I worked but even with small portions we have lots of leftovers. But a few leftovers aren't too bad. Maybe you could do a Thanksgiving for two series. I know I'd love it!

    What a yummy supper. I don’t have any ramekins so I usually make ours in oblong glass pan. A little smaller than 13x9 because we would be having to eat it all week since it’s just Jerry and me, usually. I do dice up a potato and drain and add because I love potatoes in a chicken pot pie. The little individual apple pies looked so good too. Your filling you made looked so good. I’ve never done that, but I know it is delicious. I wish I had learned to can things.     Hello from Oregon Miss Lori, when my mom would make pie crust for pies she would always, if there was leftover pie crust, she would make cinnamon sticks and just put that in a bar pan and sprinkle cinnamon and sugar over the pie crust & bake it for 15 minutes and that would be our dessert 😋😋

      My mom would roll it out and spread butter, cinnamon, and sugar. Roll it back up and bake.

    We got three apples given to us and I want to make apple crisp and there is a small tree next to us so I went over and picked enough apples to make apple crisp and apple pie filling. It was so good.

    I make pie crust all through the spring and early summer. I buy a bunch of cheap aluminum throw away pie pans. I put the pie crust in the pans put a sheet of parchment paper in between, stack 4 to 6 uncooked pie shells together and seal in a gallon size zip lock baggie and place in the freezer. I try to do about 12 to 16 pie shell in the freezer until I need them in the fall when the holidays began. Then I have the convenience of pre-made pie shells with the flavor of home made.
    I also like parsnip or turnip in my pot pie instead of potato sometimes.

    My mom use to make the potpie filling and fill the casserole dish. Then tip it with homemade biscuits. Oh man, this was good! 😛😛

    Oh, I miss those Corning Ware bowls. They were called "Grab It." My first year as a teacher, my grandmother brought me two when I invited them over for a ham dinner. I miss those bowls. I miss my grandparents even more! She was great cook and a Christian inspiration.

    Hi Miss Lori and PA Brown, thanks so much for sharing cooking for 2 recipes...I'm single and have no desire to get married, it's just me and my Chihuahua babies and these recipes help out alot...and I don't like to waste food...and it's difficult to cook for 1, so these recipes fit the bill, make 2 and freeze 1 for another day... A close lady friend of mine (Sandra) had to euthanize her furbaby today due to a huge tumor and the poor baby had difficulty in swallowing his food...and it's heartbreaking.. please keep her in your prayers...God Bless you and Pa Brown...🐾🥀♥️🙏✝️

    Looks good! A helpful hint: when I’ve chopped food I turn my knife over and use the non sharp side to move the food across the cutting board and into the skillet: safes your knife sharp edge from becoming dull quicker.
    I sure do like your cooking and gardening videos?
    I bet when you had more time you also did some sewing.

    Your pies turned out looking so good! I’m sure we all wished we could try a bite. I think I will make one tomorrow night for supper. I haven’t prebaked the bottom crust before, I might try that. I like your hair as it’s getting longer, I think it’s more flattering to your face. I’m sure you’ve always been a handsome woman.

    Love the apple tin pie idea.Pie crust is the best and so versatile.

    It's so interesting how people can make the same dish and call it something different.
    My husband is a Baptist pastor, and we lived all over the United States planting churches. But where I grew up in Pennsylvania,
    What you call pot pie is a meat pie made in a pie pan, then filled with meat and vegetables and baked like a pie.
    Pot pie is made on the top of the stove and made with a special homemade noodle.
    And our chicken and dumpling is made with a dumpling dough and dropped into chicken broth.
    I run into a lot of trouble when ordering food in a restaurant. And find it's completely different than what I'm used to.🙂

    Miss Lori, cooking for a school as you have in the past really messes with cooking at home. I cooked for a group home for years and It messed with my home cooking portions for years! Also cooking for family picnics, weddings, etc. to this day I always always cook too much. It's VERY difficult to to go from cooking a lot daily to cooking for two. Harder than most people realize IMO. A Cooking for Two cookbook sounds like a good winter project Miss Lori!

    That's a great idea. My mom used to have those bowls. I just thought I wonder who took all her corningware. How many people came in and took care of my parents. Many took diamonds, jewelry. Robbed my parents blind. I loved those bowls

    'What you are making my mom called baked chicken pie. What she called chicken pot pie contained pieces of chicken, diced celery, chunks of potatoes & squares of homemade flat dough carefully placed a few at a time into her chicken broth......so, so, so yummy. Some folks call that chicken & dumplings. But when she made dumplings, they looked more like small cooked biscuits in a rich broth. So I love beef, turkey, & chicken pot pie. She also made baked oyster pie. Can you tell I really miss my mom & my oldest sister who cooked like mom.

    Nothing better than homemade pot pie!😋😊It is just the two of as well. For his lunches I make the pot pies in the 2 cup glass food storage containers from Anchor Hocking. Have gotten lazy with the crust using a homemade bisquick mix and putting extra oil on the bottom of the dish so it is crispy on the bottom after cooking. I use the plastic lid that comes with it to cut the bottom and upper crust.
