    Hi Caitlin! I've been watching your channel since your university days. I am 57 and for the sake of my health went plant based about the same time you did. I have enjoyed quite a few of your recipes over the years. Your dump and bake pasta casseroles have been a meal saver for me more than once. I especially love the mushroom stroganoff one and the chickpea one that tastes like chicken pot pie! Thanks for mentioning that the spinach does blend up nicely. I've been afraid to try that one because of texture. I look forward to your future videos.

      @@K8EE00 Hello! There's an archive of "Dump and Bake" recipes on her blog "frommybowl" which includes various carb bases like rice and quinoa. The pasta ones are also called No Boil Pasta Casseroles. The No Boil Vegan Mushroom Stroganoff is really great. Have fun looking!

    I don't know how you've been feeling lately, Caitlin, but I've watched your channel for a few years. I've been vegan for 15 years and have raised a family with 4 kids vegan as well. Even with all that time and experience, I still learn new things watching your channel. All that's to say is, I hope you're doing well and I'm really glad you're here! Cheers to a new year!

    I so appreciate you reiterating that you can have all nutritional needs met in a vegan lifestyle 👏🏼 my yearly bloodwork is always in line too, it’s a bummer that it’s 2024 and there are still people that think being vegan is somehow unhealthy. This will be my 6th year vegan and you were one of the first people I ever followed for recipes and are still my go-to blog on the daily! Thanks for all you do.

    Thank you, Caitlin! I've been vegan for 16 years, and my blood work is excellent also. I do take Compliment Vegan Multivitamins {3} everyday but that's it. Sadly, I just am not a cook, so I pretty much eat fairly boring, Whole Food Plant Basted meals, so I really appreciate your easier to prepare meals that look delicious! For sure I'm trying the Ramen soon.

    Wow caitlin I just have to say: I am so gladyou are back. I really missed you/your content and already gave up hope you were ever going to pick up again (cause I‘m dramatic like that). And although Ingredient-wise some of your newer content doesnt really have a lot of value for me because it doesn‘t align with my diet I still really enjoy the style (coming from another creative) and personality. And while I loved and do miss the more wholefood gf naturally sweetened healthy fat Sweet recipes I thoroughly appreciate you posting the content and diet that suits YOU best (not that, news Flash, you need anyone’s approval). And anyways - of course I am here for the Food But most importantly for you because you Are just an amazing human being, just so likeable! So one thing‘s for sure: I‘ll stick around as long as you do❤️
    I really enjoyed this video- I love having you just talk to the camera. And imao you make your collabs - especially the one with thrive- work so well! It seems so sincere, suits your content and is just interesting to watch Even though sadly I can‘t even get it where I live.

      It's so good! I believe they are called Kinako Mochi (ours were stuffed with red bean paste, but I think sometimes they are not stuffed too)

    I recently got an insta pot but idk how to use it most effectively. How do you know what settings to use for the quinoa? Do you do something different for rice? Or beans? Or potatoes? In recipes I noticed people say “throw it in the instapot with 1:1 ratio” but then there’s no more details after that about cook settings? Thanks!!

      I'm finding that the 7000 ft altitude where I live means that I have to experiment with the times and the settings because they are affected by altitude so I'm guessing that is why most RUclips recipe developers don't give specific instructions.

      I usually google the official instant pot cook charts, they have a bunch on their website! I have the page saved in my phone. Quinoa only cooks for 1 min

    I've been using that low sodium tamari almost my whole life. Was never a huge fan of soy sauce, but Tamari is amazing and gives dishes and sauces a great umami flavour. I should buy stocks in the company because it's such a staple in my home. 😅

    Hi your smoothie looks yummy. I'm following a plant based raw diet, I struggle to drink, eat 16oz of cruciferous vegetables pluss I have to nuy 3 packs a day yo get that amount. I've only been doing it for 2 wks. I live in .

    Be careful of the Orgain products they have high levels of artificial sweetener in them and Stevia and they don't tell you how much. I am not diabetic but a bunch of my friends got very ill from the protein shakes. It affected me and I almost had high blood pressure and sugar coma from it. I am healthy vegan. It seems way more sweet than it says on the package. Sorry. Love your videos.

    That smoothie is really bad for your health, especially first thing in the morning. it's basically all sugar. It spikes your blood sugar leading to metabolic disease. I would not follow this advice of a "Smoothie" for breakfast.

      @jackduffy2513 100% false. Sugar is the most important nutrient after water. All the so called sugary foods like cookies, donuts, cakes, chocolate, and ice cream are bad because they are loaded with fat plus other artificial and gmo ingredients. They are not bad because of sugar. GMO sugar like hfcs and beet sugar are the only sugars I would avoid. There are no bad single single ingredient carbs.
