Might be worth mentioning the humanize function in piano roll > functions > midi transform > humanize. Can get some more randomization in pitch and timing that way.
Really cool video. One bit of feedback if I may; when you're spending extended time editing the piano roll, move the PIP of your webcam so we can see what you're doing more easily. Otherwise, I really like it :)

If you move the clap just a tiny bit ahead of the snare on the grid it sounds more human as well.

did you have to put your face right in front of the midi drum map having all the rest of the screen available?
