But if it tastes like cow's milk, but is made out of plant-matter, then isn't that a compliment to Elaine's cooking abilities? I thought the goal was to try to make vegan food taste as similar to omnivorous originals as closely/accurately as possible.

I love when the blind testers aren't overly critical of others to make themselves look better. I also love that we get a chef that isn't overly critical either! I realized for vegan mac we gotta give up on the sprinkling on top - just melt the whole thing in the roux, pour it in the baking dish, and bake it as is. It gets all golden brown and bubbly like we want bc of the already melted cheese
