    As someone who has gardened for 20 plus years and washed ALOT of lettuce and ALOT of cilantro and other fresh herbs I recommend soaking them in water for cleaning. That allows dirt particles and bugs to come loose and separate from the veggies. Dirt sinks to the bottom, bugs generally float, But either way, they get removed from whatever you want to eat. Soaking rather than rinsing uses less water. I also (sometimes not always) take that soak water and use it on my nearest plants.

      I agree ! I’m like why aren’t you soaking the cilantro or strawberries. That what the salad washer and rincer is for. I’m glad I am not alone.

      I work in a commercial kitchen and we always soak and wash in a large sink full of water, then put it into the salad spinner for drying. But our spinner is about 5 times the size of Becky's.

    I’m caribbean and we make “green seasoning” (with the same flavor profile you are freeze drying) each caribbean island may call it something different but the concept is the same
    and its usually used to marinate meats and add to rice dishes and stored in the fridge with a “paste-like” consistency . But when i buy greens like the ones you have purchased I end up blending it up and freezing it into an ice cube tray. And it also stays fresh.
    Our recipe is usually consists of: cilantro, garlic, habanero peppers, white onions, green onions, parsley, tyme, ginger, pimento peppers

    I went strawberry picking with my 8, 6 and 2 year olds a few weeks ago. Boy did I underestimate the picking ability of my older kids. We came home with soooooo many strawberries!

    I keep a bucket handy when washing produce, pour the water into that--instead of down the drain. I water my garden flowers and veggies with that water then. Cheers!

    As a mom of 7 kiddos I try to can and preserve as much as I can. I just preserved strawberry and peach jam. I love preserving food this year about to work on spaghetti sauce. Keep moving forward and stock your shelves with food.

    Random tip. I have a neighbor who freezes her strawberry tops (and other fruit bits she might have-she throws them in a ziplock and saves them) in an inch or less of water and puts it in her chicken coop as something to keep them cool and busy on a hot day.

    Becky, fill the spinner bowl with water add in the filled basket, add the lid and spin the water over the herbs to clean them. Works great.

    I fill my salad spinner with water and spin. I do multiple batches. Its like a spin rinse cycle. Then I spin dry. I love the method really saves on water usage 😊

      Mother Earth News has an archive of excellent chicken raising advice.
      The Rodale Publishing Company also has great information on all livestock.
      I had 48 layers for years and those two resources are my go to for advice.

    Hi Becky,
    Anytime I wash leafy greens (cilantro, parsley, leaf lettuce, spinach, etc..) I soak the greens in a large bowl of water for few minutes so the dirt can fall to the bottom then I gently lift them to the salad spinner. When you just rinse them under running water, you may not get all the dirt.

    I like to use the cilantro stems with a couple whole star anise pods to a couple jars of homemade stock to make an Asian flavored broth for wonton soup. I let it simmer together for about an hour or so. It adds a ton of flavor.

    Love your advice on supporting local farmers. I moved to a small mountain town but there aren’t a lot of small local farmers I support what I can through our local farmers market. Also I joined a community garden that has connected me to so many garden geeks in the area. People who know how to garden here, plus we do some sharing. It’s been awesome. I too am not a purist just trying to do the best I can.

    I found cherries for .80 a pound yesterday! Bought two boxes and we are almost finished processing! Freezer, bottled, glacé, maraschino, syrup, and we might do some brandied in half pints! FYI, you all remember that if you buy berries, put them up the same day! NO waiting! You can wash and bag them to freeze, and make jam later! 🍓🍓🍒🍒🍒🍓 🍓

      @ I think Becky did that in a video last year. It was a video where she and her mom were making food for a party. I think the strawberry powder was used in frosting or in a cake.

    I am using MIGardener Slo Bolt cilantro right now and mine is holding up through these 90 degree days. I planted it inside back in February and March and it's looking better than ever. 10/10 highly recommend this variety

      Or I just somehow got lucky. This one took forever to really bush out, the Calypso looked amazing at the start but has now bolted.

    Hi Becky!
    My freeze dryer arrived yesterday. Our first run (after the bread) will be cucumbers because they’re coming in fast and furious; we loved tzatziki sauce. The second run will be cilantro, and the third will be strawberries (I’ve already frozen them in tray sized portions. I am beyond excited!😊

      @@peggysmith1489 Once they are freeze dried, you can powder them to make salad dressing, tzatziki sauce, etc. Rehydrating probably won't be a problem then.

      For those that hate the sliminess that cucumbers can add to dressings and sauces, there is Borage.
      Borage is what major manufacturers of Creamy Cucumber Salad Dressing use for cucumber flavoring. The small little bits in the dressing that most assume is cucumbers is actually Sweet Vidalia Onions.
      Borage also brings a cucumber melon flavor to iced tea. Yum! 😋

    It isn't always necessary to buy organic produce. The best guideline for determining when to purchase organic is the "dirty dozen" list published every year by the Environmental Working Group. It's based on the foods that could be infected with pesticides. Berries definitely make the list every year.

    I’m in my 70’s and I remember as a kid my Mom would fix breakfast sausage for dinner. She would slice a 1 lb pkg and fry it. Then serve it with fried potatoes and green beans and if she had it applesauce. It was so good.

    If you freeze dried some strawberries, you could make strawberry powder with it and then make strawberry cookies with that. Sugar Spun Run has a recipe for that.

    The breakfast casserole is about the same as bread pudding that is served as a dessert in the South the difference is you use any bread you have not sourdough, Instead of your crumble topping a sauce is made to top it, raisins sauce or vanilla sauce is usually the sauces used to top it but I am sure there is more.

    Giiiiirrrrl you do way harder things in the kitchen, you can totally do sourdough. It’s super easy and honestly I feel like it’s way more flexible than making regular sandwich bread.

    On a current acre homestead binge catching up, I’ve missed you Becky 🥺. Thank you for showing mistakes and the occasional disorganization around the house and garden, I really appreciate it. Wasn’t feeling good about my struggling single garden bed that was out in this summer, like you said it takes years of nurturing soil and plants for it all to come together.

    I live 15 miles down the road from that raw milk dairy and I only drink their raw milk. I feel blessed to be able to get it. I can tell you first hand that this is a very clean and lovingly ran by a local family vested in doing good for the community. I've met them personally and they truly love their jerseys and farm. Their jerseys are well cared for, feeding in huge lush fields. Grass fed and lots of room to pasture. When I pass the jerseys, I thank them for their milk. This dairy has a storefront where you can buy their raw milk and eggs. While in the storefront you can also see their operations, again very sterile and clean! This is what local farming should look like. I am excited to see their raw milk being distributed further out! Get some if you can! Mountain Laurel Jerseys

      I'm so glad to know that this is a very well kept dairy farm! I was thinking about commenting that she should check out the farm to make sure they are cleaning everything properly. Cause raw milk can have so many awesome benefits, but also there is a reason we started pasteurizing it too! My friend's nephew spent some time in the hospital with E. Coli, and I think they did trace it to the dairy farm they had been buying raw milk from. But it sounds like this is a very well maintained farm that would be safe to buy the raw product from, so that's awesome!

    Just a tip, if you do want fresh dill to last without freeze drying, you can do it pretty easily 😊. Just rinse and dry the dill well, then get a mason jar and put a dry paper towel folded into a square at the bottom of the jar, chop your dill into smaller pieces and put in the jar on top of the paper towel then put a lid on it and store in the fridge. I have had dill last that way fresh for two months. It probably would have lasted longer if we hadn’t eaten it all in that amount of time 😂

    You can put your strawberries in jars, in the fridge and they last so much longer. I use my mason jars and a used canning lid with the ring.

    Aldi had really nice strawberries a few weeks ago for 1.49 a pound. I bought 10 and made a year or mores worth of jam and strawberry rhubarb jam. It's such a great feeling having that!

    Not the comment you probably would want to hear or expect, but I love your channel for 2 reasons. 1. what you do. it 's just amazing and 2. i suffer from anxiety - and i am medicated for it - but sometimes - even that doesn't work - the ONLY thing that does - is watching your videos. I am not questioning it. LOL so THANK YOU.

    Suggestion: Fill the sink with cold water, dump in the cilantro(other veggies) swish, Use the inner screen bowl of your spinner to scoop out a bunch of leaves, then spin. I enjoy your videos. Have you checked the parcel locker at your Post Office? I sent something for you and it says it was delivered.

    I make this a lot. Sometimes w potato, sausage, egg and cheese and other times I essentially mix in the topping: vanilla, cinnamon and brown sugar. Delicious
    At a recent family gathering, I used leftover taco meat instead of sausage. Everyone loved it!

    Becky you cut right handed... try putting the baking sheet on your left and just drop the strawberry with your left hand ( already holding it) to your sheet pan without having to cross over your right hand with the knife. :)

    To keep fresh strawberries fresh longer, put unwashed strawberries in an airtight container place a dry paper towel on top and seal container. Using this method, I’ve had farmer market strawberries last a couple of months.

    My favorite days are Becky days!!! My husband just laughs at me because I have to watch as soon as a new video is posted - generally interrupted so it may take me multiple hours like today to finish it. Have you ever tried a little bit of cinnamon in your french toast? I thought that's what made french toast... lol! maybe that's a southern thing?

    We make the same breakfast casserole and LOVE it! Sometimes I will brown sausage and add it into the casserole and crumble on top...so YUMMY!

    Love your videos Becky! I make the same breakfast casserole. I will put ground cooked sausage in mine. Sometimes, instead of the crumbled topping, I put some home grown home canned jam mixed with cream cheese.

    Hi becky, the breakfast casserole you made is something we have here in the U.K., its actually an old fashioned dessert called bread and butter pudding. Its usually made with stale bread, your version is a standard version but you can add currents/raisins, orange/lemon peel, alcohol like brandy or rum.

    I had to laugh at the raw milk purchase.
    I bought some in my town a couple weeks ago. I didn't realize it was raw until I got it home. I hopped right down the rabbit hole of researching it, got so freaked out by my findings, and I eventually gave the $9 gallon of milk to my pastor and his wife. I just couldn't bring myself to try it. I don't drink milk, but I bought it to make yogurt. Maybe someday.

    I just came home with 8 qts of organic strawberries from a local farmer. Tomorrow morning before work I'll wash and top off just like you did and stick them in the freezer till I have more time!! ❤
    I also picked up fresh shelling peas as mine are too small a harvest. They were SO good for dinner!!

    Becky - try using a melon baller to scoop out the tops of the strawberries. Much easier than a paring knife and [I think] wastes less of the strawberries. Also, your biscuit/dough cutter is perfect for cutting the butter into the crumble topping.

    Look into orchard hail netting. We covered our entire garden (30’ x 60’). We had one of the worst hail storms I’ve seen and our entire garden was completely unharmed 😊

      Just keep in mind if you cook for a friend with asthma or allergies, some of us are allergic to those silicone bags. My throat closed & I had horrible asthma from it. Just a small fyi for people like me❤️

    Becky, if you want to get the cilantro really clean, you should float it. It is what we do in the restaurant industry it allows the dirt and sand to sink to the bottom and the greens float to the top

    Holy cow! its time to get my canning totes out!! I'm in the process of moving all of my canning equipment upstairs into the closet. Much more convenient! We started with cherries from our neighbor tonight. Mulberry jam will be made this weekend and another neighbor has pie cherries ready. My mom and I will hit the farmer's market on Saturday. This all makes me feel so accomplished when my shelves start filling up. I can't wait to see what you are able to harvest next!!
