For the freshness maybe mylar bag and vacuum seal + 300/500cc oxygen absorber can solve the staleness issue. I didn't see you pulling out an absorber when you opened the big jar... Merry Christmas!
Interesting! This was a great review. I'm just getting into freeze-drying and it seems like the oxygen absorber aspect is both a science and an art. My mom also had a BIG sweet tooth and would have loved your version of fruit cake. 😋 Have a very Merry Christmas and thanks so much for all you have shared! 🎄✨😄👍
I wonder why the cake was fine but the fluff was stale... My grandmother made the fluff with lemon jello and crushed pineapple. that stuff was soo good. I don't think you can go wrong no matter what fruit and jello flavor you use.
Hello John and merry Christmas! The first thing I want to tell you is that I just love you to pieces and enjoy watching all your videos! I love how enthusiastic you are and tickled to experiment. ☺️ You’re my favorite freeze, drying RUclipsr to watch and to share. I have a couple of comments. One is about the clocks. You mentioned that some people don’t like the clocks. Well I can tell you, especially in my experience with people and clients that it is sad to say that many of them have horrible memories that involve the sound of those clocks. Child abuse, and other assaults and it just brings back those memories. So I just wanted to give you that insight. But I certainly can understand the sentiment of that sound and I certainly get it. And the only other comment I was going to make is how to pronounce Ghirardelli. It is pronounced. GEAR-a-deli. And lastly, it is nice to see your face. It didn’t matter to me whether you showed your face or not because I know if I was on RUclips I would do the same. But I’m glad to see your face and it was just a side pictured anyway, and very pleasant to see . 😊 Anyway, thank you for all that you do and share with us and I hope you have a blessed holiday.
Thanks for your kind words. I appreciate it! I can relate to horrible memories (perhaps more than you realize) and I try to please my viewers. However, you can never please everyone. I do my best now to cut out the clocks even though I have had many more compliments then complaints about them. If I am truly honest, when I look back most of the people who complained about the clocks also in other videos complained about something else. In the internet world they could be called trolls. I have an enforced comment policy that new commenters must agree to that says to keep comments positive. This isn't to censor anyone but it is because I am trying to be positive presence in a sick world. I read all comments and try to reply to most. I also try not to reply to the negative ones as it seems to feed the beast. If I check the commenter out and the last 3 comments were negative, then I delete them. Again, not to censor them but every time I open my app comments without responses from me come to the top. So I have to read/see them every time I open my app. This is kind of soul destroying for me since a lot of time energy and even investments go into my videos. I hope this makes sense. Thank you again for your support!
Love your videos, John, and appreciate all you do to produce yummy videos. Hope you have a wonderful Christmas and a healthy and happy new year. God bless you 😊🎄
🎄 Merry Christmas 🎄 🎁 Thank you for the gift of sharing your knowledge. 🎁 I think that a lot of people don’t realize that the machine is just suggesting that the food is dry and it takes human eyes, etc. to test and ensure that the food is dry. It is interesting that people want to complicate the process with changing temps, etc. But really the most important thing is testing for dryness. I also loved that cottage cheese salad as a kid. I need to try freeze drying it like you did. Did you also have the cool whip and cherry pie filling and pecans salad? I bet that would make a great treat, too. Enjoy your holiday!!! ❤
I wondered why 2 disks for 1 cup, but then you mentioned in screen text they’re 4 ounces, so that cleared that up! I’m surprised you still have treats around given how you’ve been eating everything lately (ok not everything, just those chocolate covered balls from the other day. I still remember your comment that you ate them all, lol)! Even though I have family in the next county over, I prefer to spend holidays by myself. But then I consider my RUclips “influencers” like you my family! I would think vacuum sealing would be enough but perhaps not in canning jars. Glass would help keep air out, but maybe it still creeps in over the years. I know the Mylar bags do allow air in over time, which is why an o2 is used there, otherwise they wouldn’t last 20-30 years but more like 3-6. Could sunlight have affected the treats? The jars don’t help keep out light if the door keeps getting opened every few days. Also humidity has an effect. “Store in a cool, dry area” is what I’m remembering as a storage staple. I’m glad I’ve had people like you, who experience all the trials and tribulations of freeze-drying before buying one myself! A person learns a lot from experienced “professionals!”
Thank you for the taste test. It reminded me I need to check and see if I failed to put o2 in my jars when I vacuum seal them' I bought the disc you used and I was hesitant at first about them. then I realized, when I use them. I do not over load the trays. I make sure my other trays are not full of liquids. I worry about ice build up. I weigh before I put them in the fd, and when it says it is done. . I weigh again. it does take a long time to dry, but I have done tomato sauce and tomato paste portions and a few other things and I like it. It has taken 40 hrs do some things but I continued until my product did not lose more than 1 gram of weight. Thank you for your many ideas and my family would like to wish you a very Merry Christmas. God Bless.
Do you have a recipe for your fruit cake? I have always avoided the candied fruit cakes. They are awful! I bought your cookbook but don't remember if the fruitcake recipe was in it. I don't know if you have added to it. You have a good Christmas I will be doing one for one also. I am in Montana so will have snow.
@@JohnInBibs I have a question about your cook books. When I first ordered your meal in bags cookbook it was in PDF format an not all I can find is epub or hard copy formats. Is there a way to change epub to PDF? I prefer a printed recipe.
As far as I know the ebooks have always been in epub format. They are distributed by the publisher. If you purchased off of amazon then it would be a kindle book format.
As busy as it might gets we’ve always got time for your videos. I watch em while I’m cooking.
I’m glad you’re able to squeeze them in. I appreciate it.
Merry Christmas John! I always enjoy your videos.

Thanks for all you do for us John. I hope you have a wonderful holiday and the New Year is your best ever .✌️🎉
Thanks, wishing you the best over this holiday season
I wonder if the fruit fluff with the dairy took on some of the spice from the fruit cake in the same container making it smell “off”. Just a thought
Thanks for the thought, definitely not. It was a stale smell and In my early days I thought vacuum sealing was good enough. I know better now.
Merry Christmas! Good Stuff, thanks for sharing.
Thank you Merry Christmas
Nice to watch your videos as I am learning my new Med FD’r. Much appreciated!
Thank you 😊

That was supposed to say just as I had pictured your face anyway. I have to use speak text but sometimes it has a mind of its own L O L.

Thanks for a great year of awesome videos! Merry Christmas!
PS. Do you think that packaging the two items together might have changed the smell?
Thank you and Merry Christmas to you as well. I am sure that the smell was from the lack of using an O2 absorber
Do you think it would be easier/better to fill the disks half full and just put more in a jar?
Great idea
