Truly excellent pozole verde, Claudia. First batch was a hit; the second batch for a dinner party got raves! I added to my pprinter recipe some Preparation steps that I got from listening to your video. I added them below to help others: Preparation 1. In a large pot, combine the pork, garlic, 1/2 onion, salt, bay leaf, tsp oregano, stock, cilantro stems, and enough water to cover, Bring to a boil and skim the top. Reduce heat, cook until tender, for 2 to 3 hours. 2. In the blender, combine onion, roasted peppers, tomatillos (or canned chili verde), pepper, cup soup broth, bouillon, cilantro, greens, bay leaf, cumin, cumin seeds, and blend until smooth. Open beer, pour into glass, drink heartily. 3. Oil in a skillet, add green sauce, and simmer for ~ 10 minutes. 4. Add to the soup: Hominy, green sauce, and stir well to combine. Bring to a light boil, taste for salt, reduce to simmer, and let cook another 30 minutes (or less, if you're hungry) tasting constantly. 5. Serve garnish on a plate, warmed corn tortillas in a basic, and beer in a glass. Tips: * Make sure to use only tender cilantro stems and chop them finely. * Sprinkle queso fresco on the soup. * You can skip the tomatillos and use La Victoria Thick 'n Chunky Salsa Verde. It's excellent! * If you're going to all this work, make home-made tortillas. It's not that hard and they taste much better than store bought.

Claudia you can buy New Mexico chiles each Aug or September and roast them and freeze them and have them ready to use without having to roast your chile's each time need to use some. The chiles have a WAY better flavor and will kick your recipes up to a whole other level. You can buy mild medium or hot and the flavor is much better than Anaheim or Poblano. Try ordering from Lujan farms out of Las Cruces, NM. Or any farms out of Hatch NM. You will be so happy you did. They make the best chile rellenos or salsas and sauces. I make my green chile posole with Hatch chile, garlic and chicken bullion. It's to die for. Let me know if you have any questions and I can hook you up. BTW they also carry the hatch chiles every year at Food City but you can get better shipped directly to you and you can roast them yourself on a grill.

@@ASoule-ks6yq Right now is when you can get them. They are harvested July-Sept. This is likely the last weekend to buy green chile. Food City carries them this time every year. Call them and ask if they have anymore. They also roast them for you at some of their sites. The one on 91st has a roaster for sure. Also if you are in the PHX- metro area this weekend the news said the Blue Clover Distillery in Scottsdale is roasting them. Those chiles look amazing. They guy just brought them in from hatch. We may go get some ourselves. (hope this helps) Let me know if you go.

Hatch chiles are not bad, but I would never replace Poblanos for Hatch chiles. Never!!!

I can’t wait to make pozole when it starts to cool down. Question for you.. I heard that you can add pumpkin seeds to the blender to thicken it and give it some extra flavor. Have you tried that before?

My mom adds a cup of hominy to the blender to thicken and give it more flavor and it comes out amazing!
