My dad used to take me to the Gulf State Pier to catch huge sheepshead. The evening before, I would go out on the beach and catch fiddler crabs. Sheepshead love them, and my dad knew just how to present the crab to the fish, jerking upward with just the right movement to catch the fish. We would go back to our cabin, and he'd scale the fish, then stuff it with blueclaw crabmeat. Into the oven to bake for a while, and OMG...No restaurant anywhere could match that taste. One of my best memories ever. Love you, Dad, see you in heaven...
Not flexing here....but i grew up on the coast in Fla...one part of my family settled a small fishing village...i Wish i had a $1 for Every Redfish, Snook (my Fave), Grouper, Mullet, Amberjack, Largemouth Bass, Shellcracker, Bream, i've cleaned...we would sometimes catch 300 a day on Lake Okeechobee. facts. A good sharp knife and whetstone nearby...and you can learn how to 'split the tail fin down the middle' like i've been fortunate to do at times. *Now, lets talk about Alligators (Yum)....@bigrich/ Filet knifes don't have to be expensive either...and hold your knife at 20* degrees when sharpening it on the whetstone.
As you know, sheepshead is a porgy/sea bream and very similar in shape to a fish we call "snapper" here in Australasia. You did a great demonstration of filleting and that's the way that most people at least attempt do it in this part of the world. Just to add, I scale some of my fish and cook with skin on. Scaling makes filleting for non-professionals so much easier and adds a lot of flavour when crisped. Keep up the good work!
Try rubbing some olive oil on the flesh side and thro it on the grill flesh down for a lil browning THEN flip it to the scale side down n then ad seasoning.
Every time I clean one now the voice in my head is going , “Angle your knife slightly up and separate the connection the pin bones make with the ribs…”
Wish I had this knowledge when I was catching "Ta Tog"? On the east coast! I never knew of a tougher fish to process! " Ta Tog" was known as poor mans lobster! Absolutely superb eating!!!
I'd love to see a fishmonger, have a program, I could come and take a class or two on how to filet properly. I'd pay for that in person experience. I;d even work a week for free to learn. I had noone in teaching me anything as a kid, so I have guessed and watch videos to learn, but it's not enough. I need that real life doing and it experience to really enjoy fishing. I sadly gave up after years of being frustrated. I guess I have some learning disabilities. Thank God I can still buy the tasty little jokers. Thank you. I'll subscribe and hope I catch one to get to use this.
what would you say to a person that can only tolerate a light fishiness like catfish i would like to eat some fish before i die and that almost happened last year
Back in the day these were considered trash fish. Also the bigger ones can and do have worms. These are considered a delicacy and served at fine seafood restaurants. Things change.
Fishmonger is an expert for sure. But I have another way. Go right in the vent, push blade straight up and out the back ,then go in that cut and start towards the head. I mean ,there is already a hole there, reverse filet I say. The skin is so tough it will dull your knife pretty fast. Pork chop of the sea.
interesting how he gives advice on how to catch sheephead but the ones he is filleting were spearfished :) doesnt detract from the lesson.. just pointing it out :)

What a sweet story. I hope you share that memory with your kids
I’m 68 and have been fishing my whole life and can’t clean fish as nicely and cleanly as you do. Total respect!
It’s about tools and skill. Not age.
@@dwayneflorence4482 that was the point of my comment
It’s ok bro. Some people have disabilities. The main thing is you haven’t quit.

Best sheepshead fileting I've seen

Excellent video! I've seen many fisherman butcher sheepshead, but you have the knowledge to clean them properly.
Excellent instruction!
Nice work! Showing respect to the fish with very little waste!
This is how you fillet basically any fish, not just sheepshead.
Prove it
perfect demo!
Man wish I had this tutorial last weekend lol thanks for the video
thanks, great demo
Outstanding video
excellent tutorial.
Excellent instructions
Excellent Episode 👍
Awesome video. Thanks
You killed it on that one bro
Perfect, Thanks

Nicest job I ve ever seen fileting fish.
Reed is the man!
Great job.
Fantastic methods...
Good job!
Great vid. New subscriber.
I could of used this tutorial last weekend. Would really save me allot of time. And frustration.
Reed is a beast
Sheepshead,Snook and Redfish all a go💪🏾went gigging one night in the river and caught so many we couldn’t give them away😂
Every time I clean one now the voice in my head is going , “Angle your knife slightly up and separate the connection the pin bones make with the ribs…”
Ha! I literally have his whole script memorized as I’m filleting
Will this halfshell method work for the pinbones in redfish?
Your the Best
What is the knife you use most?
Nice job! Is that a Dexter blade? What size are you using ?
One of the best fish I've ever eaten
Awesome
Great 👍🏻
What do you do when you find a bunch of parasites? Not just sheepheads....any fish?
Wish I had this knowledge when I was catching "Ta Tog"? On the east coast! I never knew of a tougher fish to process! " Ta Tog" was known as poor mans lobster! Absolutely superb eating!!!
Also known as slippery bass 😂
Thanks- now I just need to catch one worth keeping…
TNX VID LOL
What is that white thing with a hole above the pinbones? (Towards the head) A parasite?
What brand name and size knife do you use?
Unless you’re cleaning fish for a living get you a Worksharp knife sharpener. All your knives will cut like his regardless of brand.
Looks like a dexter 10" thin blade
Very fine eating right there, either way.

I start totally different, but its a fisherman's trick, and not a chefs trick 😂
New channel?
He said at the first of the video he was representing Sportsman magazine.Possibly a new channel for Sportsman Magazine.

If you got two go for it! If you got 40, I'm breaking out the electric! Good video though.
Bay snapper delicious
Here's an idea, how about scaling the fish before filleting?!
A fish with human molars is creepy as hell😂
Oh how I hate getting those fish pin bones in my mouth. Gags me.
I see some questionable blood in that fillet. Is Sheepshead a fish that should be blead out as soon as caught? Like Tuna and Red Drum?
Soak the fillets in an ice water bath and the blood comes out into the water. The meat will turn white and be firm.
@@terrywilliamson1524 Thanks, that's a great tip.

Them sheepshead are like piranhas with them teeth in their mouths angry looking fish but good eating 👍🤓👍
Any cheeks on that Sheep?
What about the teeth
if they are crooked you may try braces...😊...
What about the best cut, the wings, what a waste !
Frequently Fish the Gulf. Why would you eat Sheepshead? Yall need dencher?
What's up you all turns me off completely.😢
Are you going to cry? I got some extra tissues if you need.
Asian don’t fillet fish. Best meat are on bones
