I made this recipe yesterday and it is wonderful. I had some cut green pepper I needed to use up that gave it a Mexi-corn taste. Will be making this again.

My grandmother made hers with bacon, but very similar... I can't wait to make it. OK I just couldn't resist, I made this with the bacon instead of the sausage, and it was divine.
Looks great! Going to try this plant-based as I have a family history of Cancer so need to avoid the estrogen and possible BLV in dairy and the lead and choline in bone/meat stocks. Thanks so much for sharing
I love corn chowder. I make a potato soup that cooks all day with ham hock in my 8 qt crock pot. There is usually a fair amount left on purpose. I generally add corn to it for a second soup of ham corn chowder. My son and I love corn but not my husband. I freeze it for lunches.
I made a chicken corn chowder and my family loves it, but it is very rich. I make my own sausage so I think I will make this next week! I will have to use canned corn, but I am sure it will be tasty!

What if I want to use chicken instead of sausage? Do I add a little bit of oil to cook the chicken prior to adding the veggies?

I think I’d just replace the sausage with something of similar consistency, like pulled oats or even tempeh. Or maybe some seasoned, pre-cooked beans?
