I made a pot of this for my lunches last week. It was fabulous. It was flavourful and tasty. I enjoyed it every day. The quantities here did for six days and that was a reasonable potion for me but i could see some people wanting more. I used frozen corn since this is what i had in and the taste was good. It kept well in the fridge. I will be making again.

I made this meal for my family tonight and it was delicious. I followed the recipe exactly and it turned out wonderfully. After I added the plant butter and spices and was browning the corn in my Dutch oven, my 10 year-old daughter walked by and said, "Oh my God, why does that smell so good?"
