Join me as I take you along to see what groceries we got during a week in April 2024, how much those groceries cost, and what I ended up cooking for my household's dinners for a full week. I’ll teach you a trick my sis in law taught me and it’s so yummy and easy..Pork Carnitas
With your pork roast.. brown on all sides, then place in crock pot ( slow cooker)..
Then LIGHTLY season on both sides with black pepper, and maybe some garlic and onion powder..
Now pour a jar of green salsa over the pork…
SEASONING DEPENDS ON YOUR SALSA..cook on low for 7-8 hours..
When done shred with fork.. serve on warm tortillas and cheese..
Yummy..
Also good over rice..

I love the fact that you are not afraid of seasonings and trying new flavors. I was born in Trinidad (tiny islands off the coast of Venezuela) and when I say I perk up every time I see the spices you use, making sure to season each thing you are making down to your rice, which I even started doing from time to time because my daughter hates plain rice. I love your style of cooking because it is very similar to the way I already cook and it’s simple yet comforting and always budget friendly. Hope you keep this channel going but a long time😊
So long as your version of Shepherd's Pie ( lamb) Cottage Pie ( beef) Fisherman's Pie (fish) , tastes good, who cares? Main thing is that it's a poor man's meal that tastes delicious and is packed with nutrition! Our ancestors used what they had to hand! I'm with you on the gravy thing. I would rather have too much gravy than have to swallow down every mouthful like it was a sandy lump. Gravy = flavour!

I have cooked pork shoulder in the past, not so much now because I live alone.
My favourite way is bone out the pork shoulder (you can save the bones for stock; or ask your butcher to bone it out for you).
Make a homemade stuffing (not packet mix).
Stuff the meat, roll it up and bind it with kitchen string.
Cook as a normal roast with baked veggies, green veggies and pan gravy.
A tip for homemade stuffing: save the end crusts (heels) of your bread loaves and freeze them.
When you have enough, put them in a small blender to make into fresh breadcrumbs.
Mix with finely diced onion, garlic, butter, eggs and a dash of milk if required. Season with salt and pepper.
Add any favourite herbs you like, such as mixed herbs, Italian herbs, Tuscan herbs, Herbs de Florence, or sage.
To make pan gravy: take your roast meat out of the pan and put it on the stovetop. Using the juices, add 2 or 3 tablespoons of flour. Mix until you get a roux. Then slowly add water while stirring consistently until you get the required consistency. Ad salt and pepper to taste. You can serve as is, or put it through a sieve for a smoother consistency.

Quick tip- if you place bread under the meat loaf while baking, it will absorb all grease. You'll be amazed !!

I use my meat masher, for mashing hard boiled eggs for egg salad, for mashing potatoes, and for mashing up fruits when i am canning jam and fruit syrups.
I felt the same way about this tool at first, it was just another tool that would take up space in my drawers. Now i regret not having one sooner. Im so glad i spent a 1.25 on my first one. Its a handy tool in my household and i can't imagine not having one in the future! 😊

Great idea to use lentils to extend the meat. I like the stuffing idea too.
I love adding lentils to ground meat to help stretch it! You don't need to soak lentils but it does help with digestion you soak them for a few hours and rinse them before cooking. Helps get rid of some of the tougher carbohydrates that aren't easy of our tummies and cause gas and bloating. 😊

How in the world did I not know that you lived in Raleigh? All these years! Who knew?. Love your work and especially your creative cooking ideas for super tight budgets. Anyhow, you are way way way way way way way better than me when it comes to yeast or anything past the expiration for that matter, 3 years past expiration? OMG you crack me up. But boy it still was great wasn't it? I should have you lived in North Carolina from seeing that bone sucking sauce on your counter lol.
You do an awesome job I have weeks I eat say Rice alot during a week or steak 3 times, Spaghetti several meals. It's okay. Saves money. I purchased half a baked Chicken Breast and put together 3 meals that do not need to be cooked, 1 to reheat, and Chicken Salad.
I do not skip on my protein portions but added veggies, rice, fruit to the meals so I do not need alot more, yet the meals will be quite filling.

When I make myself a bigger meal on weekends, I eat leftovers for 2 or sometimes 3 days. As long I freeze it, I am happy and content with what I prepared. I just bought one of those tools and I thought the same thing, but I really like it it chopps up the meat so much finer great for taco meat makes the meat stretch farther.

With the gravy mix you could just sprinkle it directly into your pan (am a Brit, we use gravy powder/granules all the time).

Those onion tops are actually seeds that could be planted and grow new plants. Alaska here, some variety of green onions grown in northern Alaska and the Russian variety do seed tops.
I cut the flowers off shortly after this video and left them to dry and now have TONS of green onion seeds.

On meatloaf, I cook them in muffin tins because you can cook less time and leftovers are divided out nicely for the freezer.

I mix brown sugar and ketchup together then place on meat loaf after its cooked for about 30 minutes. Then place back in oven for a few minutes..

I add 2 jars of salsa, ground beef, beans, onions, seasonings to make my chili. We don’t like it very spicy. Only mildly spicy. I find the salsa gives it a great flavor.
Or even cheaper but still good flavor house brand of Rotel. Also I have found Wal-Mart brand canned salsa that is good but cheaper than the jarred ones, good idea. 😊

Usually with a pork roast I have the roast the first night, then bbq pork sandwiches, pork enchiladas, pork fried rice. Usually by then we’ve used it up - otherwise it goes in the freezer as my family are sick of pork by then. Lol
Brown lentils are great in chili if you haven't tried it before. Also Slap Ya Mama is actual Cajun seasoning from southern Louisiana. That's why it has more of a kick. 😂
Lisa I absolutely love the way you cook and so many ideals that you come up with it’s just amazing. Your videos I look forward to but when you don’t post one for a while I really miss them lol I keep looking for a notifications . We keep even seeds from peppers and tomatoes and plant them and then my son-in-law did some asparagus and it worked really well. Glad you put a video out there hope you all have great summer.

my favorite use for zucchini: CHOCOLATE ORANGE ZUCCHINI CAKE Favorite Recipes of the Sutton Families & Friends
Ingredients:
2 1/2 cups flour (unsifted)
1 1/2 tsp. baking soda
1/2 cup cocoa
2 1/2 tsp. baking powder
1 tsp. salt
1 tsp. cinnamon
3/4 cup soft butter
2 cups sugar
3 eggs
2 tsp. vanilla
2 tsp. grated orange rind
2 cups coarsely shredded zucchini
1/2 cup milk
1 cup chopped pecans or walnuts
Recipe instructions: Preheat oven to 350 degrees. Combine flour, cocoa, baking, powder, baking soda, salt, and cinnamon. Set aside. With mixer beat together the butter and sugar until they are smoothly blended. Add the eggs; one at a time, beating well after each addition. With a spoon, stir in the vanilla, orange peel, and zucchini. Alternately stir dry ingredients and the milk into zucchini mixture, including the nuts as a last addition. Pour into a greased & floured 10 inch tube pan or Bundt pan. Bake in oven at 350 degrees for about 1 hour or until wooden pick inserted in center comes out clean. Cool in pan 15 minutes. Turn out on wire rack to cool thoroughly. Drizzle glaze over top. Cut into thin slices to serve. GLAZE: Mix together 2 cups powdered sugar, 3 Tbsp. milk and 1 tsp. vanilla; beat until smooth. You can also make in a couple loaf pan and it can be frozen

Aww Love your cat. PLease remove the metal lids from the cans wrap them in other trash. Never leave it connected to the cans as dogs and other animals go sniffing around and get their tounge and paws trapped in them I saw one dog almost had his tounge cut off because the more they pull the tighter the lid get cutting deeper and deeper. we make our wings or thighs in the air fryer. Season in a large bowl and toss. then cook for 45 minutes on 385. ,.
