  • Chocolatey, chewy, easy and quick to make, no-knead recipe.
    Ingredients
    225g T55 French flour
    10g cocoa powder
    6g granulated sugar
    4g milk powder (optional)
    2.5g salt
    2g instant yeast
    168g water
    50g chocolate chips
    This recipe needs to be made at a base temperature of 52°C
    Base temperature - (room temperature + flour temperature) = water temperature
    For example: room temperature 21°C, powder temperature 21°C
    52-(21+21)=10
    The water temperature is 10°C

    0:13 Mixing ingredients
    1:03 After mixing into dough, hydrolyze for 30 minutes
    1:09 First stretch & fold
    1:48 Second fold
    2:29 First fermentation
    2:50 Divide the dough
    3:04 Pre-Shaping
    3:29 Intermediate fermentation
    3:35 Final shaping
    4:33 Final proofing
    5:04 Baking
    5:09 Baked
