People in comments talking like they know better than the guy. Fugu licenses are not easy to get. He knows best. If he says all you need is a couple off solid strikes to the back of the head to stun the fish, I'll trust that advice over internet warriors. And if you didn't know, your nerves can still fire post-mortem. It moving doesn't necessarily mean it is alive or can feel anything.

This fish is difficult and dangerous. Obviously not meant for human consumption. The fish is consumed for vanity purposes only. Asia is not known for their humane treatment towards living things. The whole practice is barbaric and pointless.

I am a catfish seller. I do all the butcher, skinning and filleting. YET, I ALWAYS make sure that the fish already DEAD before I continue to process them. If there are many saying that if the soul of the food remains then it will make the food even tastier, then I am more than glad to say that IT'S ALL BULL SH*T...
And to point out that we currently dont know whether fish feels pain. There were many attempts but no solid proof. However we do know that hitting the spines shows less stress in the muscle for the fish... so your whole thing of kill first has a high chance of being more inhumane

That IS a long practiced chef. It takes a lot of time to learn how to cut off the spine properly in the beginning so that the fish doesn’t feel pain. The reason he doesn’t “kill” it first is because the fish needs to excrete its poison while it’s alive first.

As far as i know isn’t as simple as just killing the fish before start cutting it, blowfishes contains a highly poisonous toxin which gives you (if you are poisoned) a slow and very painful death, if i am not mistaken you need to keep the fish alive until you separate the toxic sacks otherwise it’s not eatable. And the guy chopping up the fish are a trained professional and also have a license which is required to cut this fish, sure it might be a little explicit but there’s far worse things to see in this world,
Here's an idea, how about we stop eating a fish that causes a slow agonizing death? There's plenty of edible fish in the sea where one doesn't need to butcher/skin it alive just so it won't kill you.

Like everyone else yeah this is difficult to watch, and yeah he didn't do a great job at killing the fish. But, with the little bit of research I did, it looks like this is how it is done in Japan, except most chefs will bleed the fish through the head/neck area while breaking down the fish instead of bashing its head. And those chefs who do bleed the fish, it looks like it's still alive, but I also wonder how much of it is just nerves contracting. With that being said I wouldn't necessarily blame the chef for how he is conducting his very delicate work, and yes it is delicate whether it looks like it or not. But blame the way the process is taught. If you must blame something.

BadWolf It has to be cooked like that, otherwise the poison in that fish would kill you, slowly and painfully. The fish’s poison is way more cruel for us than the fish’s head chopping.

Are people really concerned over a god damn fish? Now I could quickly get this over with by saying, "If you don't like it, then click off it" but seriously. You're going to attack someone for showing how a deadly fish like this is prepared and served? Really? And some really feel the need to seem as if they are an expert upon Fugu and criticise someone who is skilled in this cuisine. Now I'll admit. They should have administered a stronger blow first and then begin cutting. And for those concerned about it still being alive as its being cut, do remember basic anatomy and realize that even fish have nerve endings. So yes, it will still be moving. In addition, this is how it's supposed to be cooked and some cultures have no issue with this at all because its their culture. And if you can't handle that, then oh well. I can guarantee those of you pretending to be an expert can't even properly prepare this. And there is no reason to automatically unsubscribe from a channel because of one single video. With every creator there will be a video you dont Like. But that doesn't mean you have to unsubscribe because of someone properly cooking Fugu. Hell. 복어국, 복어 튀김, 복어 껍질 무침 좋아했는데 앞으로 먹을 땐 산 채로 손질되던 복어 한마리가 생각날 거 같다. 인간도 잡식동물이고 앞으로 복어를 먹긴 하겠지만 이 순간 맘은 불편하네. 이 영상보기 전이랑 이후가 다를 듯.

살이 별로 안 나오는 이유는 우리는 일반 생선회를 먹을 때 살에 있는 미세혈관까지는 제거하지 않고 그냥 먹는데 복어는 피에 독이 있어 미세혈관까지도 싹다 잘라내기 때문에 살이 별로 없어 보이는 것
