    I made this recipe today. They turned out wonderful! They were huge. I made 6 apple cinnamon rolls. I whipped up some of my apple pie filling, and after I boiled the bagels I poured my pie filling on top of them. My husband gave me that idea. Then I made 3 onion, and 3 sesame seed. This recipe is now my go to recipe. Thank you.

    Thanks for the bagel recipe. I just made another bagel recipe and wasn't impressed but your recipe looks much better already. My husband bought me a Bosch Universal Plus mixer so I will be using that for the kneading part so I don't have to do it by hand. It has a big motor and I know it will handle it because I've made bread in it already. I think I will make some of the bagels with cinnamon sugar (my favorite), poppy seed, sesame seed and everything (husband loves this)

      @@SugarSpunRun It was! Thanks it really was. I used my Bosch mixer which was a gift from hubby and it was a time saver because the strong motor handled the kneading with the dough hook with no problems so I skipped the hand kneading process. I made some with everything, sesame seed, cinnamon & sugar and asiago cheese. My husband loved it and was surprised they were still good the next day unlike some bakery places that sell bagels. I really loved the asiago ones and next time will be making more.

    Hi. I have 2 questions.
    1) Can I freeze the dough and use it later?
    2) If I freeze bagels how to unfreeze them? Shall I also unfreeze one bagel at a time?

      I haven’t tried freezing the dough. I think it could work though. You can freeze the finished bagels and just defrost them in the microwave then toast. 😊

    Thank you for this. I will be making these very soon. My husband is deathly allergic to sesame and EVERY bagel on the market has sesame flour!!!! I can finally bring bagels back into his life I am so excited. He used to love the "French toast" bagels from bagel world before the allergy; any advise how to make them? Is adding cinnamon technically enough for a French toast bagel?

      Ooohh that sounds delicious! I'm not sure how to do it. Maybe dip them in cinnamon and sugar? The cinnamon is definitely a good start though. :)

    Love this recipe! I was putting off making them because i never made any type of bread in my life and i was scared to make them. Would love to know how to make cinnamon raisin or other sweet different kinds. Thanks for the recipe!

      I hope you enjoyed them! If you want to make them cinnamon raisin bagels you would want to add some cinnamon in with the flour (how much is a matter of taste) and stir the raisins in while mixing right before the first rise. 😊

    I made them. They were delicious hot. I’m sure how they heat up. The only thing i forgot the 1 tsp of sugar. But they still came out great.

    These look really delicious, and they would be wonderful toasted with some butter and cream cheese (yes, I have to have both!), or with smoked salmon, too. Have you ever had your mixer motor stall? I have a bowl-lift KA and I'm a bit hesitant to do any heavy doughs as I don't want to hurt the motor. Thanks for sharing this.

      Knock on wood, I have not had any motor issues with my kitchenaid. I did make several batches but I end up kneading the dough by hand because it really is just too much for the mixer.

      @@SugarSpunRun Thanks. I remember one time when I was making a large batch of whole wheat bread, the motor did strain, so I shut it off, let it rest and then divided the dough and it was OK. I don't think the mixers can really do the capacity that they're supposed to do at one time, but smaller batches work. I hear people love their Ankarsrum mixers for doughs, but I don't like their smaller mixing bowl for cakes. Thanks again!

    Question - I do not have a stand mixer but I do have a dough whisk; I also have a 9 cup food processor with a dough blade. Would you recommend cutting the recipe in half and using the dough blade, or leaving it as is, and using the dough whisk??
    Also, we make your biscuit recipe; it is our fav recipe for them, and they do not last long!!!

    Made these yesterday. The dough itself was delicious and soft..but how do you keep the nice round shape from the baking sheet to the water? Mine went out of shape the minute I picked it up😞

    So I've been hankering for a cheese bagel like they used to sell back in my elementary school days.. they were just these orange/yellowish bagels where the cheese wasn't on top but rather inside. Would I be able to just mix some cheese in the dough in the beginning?

    Can one use All purpose flour or does it have to be bread flour? Usually I have a bag of bread flour and I don't want to go out if i don't need to

      Yes you can use all purpose but the bagels won’t be as chewy.

    EXACTLY what I was looking for! Thank you very much. You did a lovely job teaching us this project.
    Sometimes I get a craving for a crunchy toasted bagel topped with cottage cheese. I LIVED ON THAT meal when I was in college. Pile the cottage cheese on! The bagel is strong enough to carry it. Very nutritious!!

      You can just leave the egg wash off of these bagels. They won't brown quite as well but that's it. :)

    So I hand kneaded mine. Took about 15 min but damn did those bagels come out delicious. Italian herb and cheese topping. So good. With a smear of home made scallion cream cheese. They were so chewy and yummy. They will be a lot prettier if after you divide the dough you tuck the ends in and open palm roll (like you would tortilla dough) smoosh down a little and push you thumb and index finger together through the center. Twirl on your finger for hole stretch.

    I thought you were supposed to boil them in water with baking soda. How long will they last in the fridge or freezer?

      Boiling in baking soda water isn't needed here. Bagel dough may be made 1-2 days in advance. After preparing dough and placing it in an oiled bowl, cover tightly and allow to rise in the refrigerator for 1-2 days before using. Allow the dough to sit at room temperature for 30-60 minutes before proceeding with the recipe. They can be stored in an airtight container at room temperature for 3-5 days. They will be good in the freezer for about a month. :)

      For the teaspoon where are you proof the yeast you could just omit the sugar, the yeast will just take longer to activate. If you’re looking for a substitute for the light brown sugar you could use honey instead but you will probably end up needing a bit more flour just because of the added moisture from the honey.

      Lots of people do it for the flavor it will add to the bagels. I prefer to use honey or barley syrup if I add anything. :)

      I do use weights all the time. You can see them in the description. Cups are standard in America so that’s how I present it.
