My husband bought me a Bosch Universal Plus mixer so I will be using that for the kneading part so I don't have to do it by hand. It has a big motor and I know it will handle it because I've made bread in it already. I think I will make some of the bagels with cinnamon sugar (my favorite), poppy seed, sesame seed and everything (husband loves this)

I used my Bosch mixer which was a gift from hubby and it was a time saver because the strong motor handled the kneading with the dough hook with no problems so I skipped the hand kneading process. I made some with everything, sesame seed, cinnamon & sugar and asiago cheese. My husband loved it and was surprised they were still good the next day unlike some bakery places that sell bagels. I really loved the asiago ones and next time will be making more.

I haven’t tried freezing the dough. I think it could work though. You can freeze the finished bagels and just defrost them in the microwave then toast. 😊

I hope you enjoyed them! If you want to make them cinnamon raisin bagels you would want to add some cinnamon in with the flour (how much is a matter of taste) and stir the raisins in while mixing right before the first rise. 😊

I have a bowl-lift KA and I'm a bit hesitant to do any heavy doughs as I don't want to hurt the motor. Thanks for sharing this.
Knock on wood, I have not had any motor issues with my kitchenaid. I did make several batches but I end up kneading the dough by hand because it really is just too much for the mixer.

I don't think the mixers can really do the capacity that they're supposed to do at one time, but smaller batches work. I hear people love their Ankarsrum mixers for doughs, but I don't like their smaller mixing bowl for cakes. Thanks again!

So I hand kneaded mine. Took about 15 min but damn did those bagels come out delicious. Italian herb and cheese topping. So good. With a smear of home made scallion cream cheese. They were so chewy and yummy. They will be a lot prettier if after you divide the dough you tuck the ends in and open palm roll (like you would tortilla dough) smoosh down a little and push you thumb and index finger together through the center. Twirl on your finger for hole stretch.
Boiling in baking soda water isn't needed here. Bagel dough may be made 1-2 days in advance. After preparing dough and placing it in an oiled bowl, cover tightly and allow to rise in the refrigerator for 1-2 days before using. Allow the dough to sit at room temperature for 30-60 minutes before proceeding with the recipe. They can be stored in an airtight container at room temperature for 3-5 days. They will be good in the freezer for about a month. :)
For the teaspoon where are you proof the yeast you could just omit the sugar, the yeast will just take longer to activate. If you’re looking for a substitute for the light brown sugar you could use honey instead but you will probably end up needing a bit more flour just because of the added moisture from the honey.

Ooohh that sounds delicious! I'm not sure how to do it. Maybe dip them in cinnamon and sugar? The cinnamon is definitely a good start though. :)

You can just leave the egg wash off of these bagels. They won't brown quite as well but that's it. :)

Lots of people do it for the flavor it will add to the bagels. I prefer to use honey or barley syrup if I add anything. :)

I do use weights all the time. You can see them in the description. Cups are standard in America so that’s how I present it.
