- Indian street food - Today I will take you on an Indian street food tour of Amritsar, India, to eat the WORLD'S BEST VEGETARIAN food.
To start our Indian street food tour in Amritsar, we went for breakfast to an old restaurant that serves the best Amritsari kulchas with chole in town.
After that, we went to have the famous Punjabi lassi made the traditional way.
To continue our street food tour in Amritsar, we went to have the most buttery and cheesy dish I've ever had, Paneer Bhurji.
To end our Indian street food tour in Amritsar, we went the famous Kesar da dhaba to eat the WORLD'S BEST VEGETARIAN food.

I had the luck of living in India for long intervals for 3 years, I was amazed of the unknown cultural similarities in between Italy and India and above all the immense respect we both have for what we use to feed our bodies. For sure the only country I could happily be a vegetarian without any regrets for taste.

You are actually Correct, when I was a kid there used to come a show on Fox Traveller I think named David Roco's Dol Ce Vita, I was about 14 at that time and even I was surprised how much culinary and cultural commonality we have. I remember once an Italian chef said, both in India and Italy, Grandma of the home is the head of the kitchen.

It is really so amazing of these great food people combining ingredients to come up with a culinary experience having never encountered !
I like they smartly tenderizing kulcha, while kind of hard just out of tandoor, by pressing ghee, and squeezing or wrinkling the stuffed bread, that's really cool ! Butter is absolutely the soul of most cuisines, not the store-bought ! And layering paratha is catching eyes !! Great thanks with the lenil stew !

As a Indian the only European cuisine i enjoy is italian cuisine because of so many vegetarian italian options and italian really know how to use cheese and dairy properly... Even my mother enjoy dishes like cherry tomato pasta and many like that..
