This week, steamed grilled clams in butter garlic sauce on a charcoal grill. We used a Big Green Egg but you can do this on any charcoal grill or even...gasp... a gas grill. Grilling clams is a very easy process and the butter, garlic, shallot and wine sauce is a snap to throw together.

@@chefblakesbellybustinbarbe2009 hi Chef! They make alcohol free white wine that your Dad may let you use. If not, chicken broth will work or a 50/50 mix of white wine vinegar and water.
Reminds me of when I was a kid in the 1960's and we'd go to New York to visit our relatives. I remember sitting on the back porch with my Grandfather eating steamed clams with a butter garlic sauce. I'd then get the leftover sauce and drink it from a cup! Yummmmm

What is the green you sprinkled on?
Just some chopped parsley for some more color. It's great to put some cilantro or other chopped fresh herbs in the butter sauce when you make it too.

always told to soak in water with cornmeal to get them to clean out sand
I mkae these quite often and only every once in a while does someone get a grain of sand.

It is similar to the way you burp Tupperware. The Egg makes such a solid seal that opening it too quickly will cause a fire ball which has claimed many an arm hair in its time....
When you put clams directly on the grill don't you lose the broth that's inside them ?😊
