Ingredients:
175g / 6½oz Self raising flour, If using plain or all purpose flour add an extra 1½tsp baking powder
120g / 4½oz Granulated sugar
175g / 6½oz Vegetable or Sunflower oil
4 Large eggs
1tsp Baking powder
¼tsp Salt
100g / 3½oz Icing or powdered sugar
1 medium orange
1 medium lemon

We prepared this recipe today and it’s so easy to make. The cake was absolutely delicious. A light, moist and fluffy sponge with a zesty orange and lemon tang. Stunningly good. Thoroughly recommended.

WOW! I just had a slice of this and I am calling it the Gumbo of cakes. The cake is like a good Gumbo loaded with a burst of different flavors going off. First there is the Orange-Lemon of the cake, then comes the icing, then a nice rich buttery flavor! The over all flavor is very pronounced, not at all like that tasteless store bought stuff. And on a side note, my ordered items all arrived quickly and in perfect condition. Love the skeleton gloves, worked perfect for removing the cake from a hot oven. Thank you for an excellent recipe, John!

Update: This is the third time that I have made this cake. Nothing can equal it in taste and texture. Over the years, I have made box cakes with vegetable oil, and they tended to be dense with a taste more redolent of chemicals than natural flavors. If I didn't know otherwise , I would likely think this is a butter cake. I plan to enter it in the county fair in August, and I have no doubt the judges will be as delighted with it as I have been.

Once I was randomly searching for some lemon cake recipes and came across yours, so I quickly took a screenshot of the recipe but forgot to subscribe and read your Chanel's name. I should te you that the Lemon drizzle cake recipe of yours turned out absolutely fabulous. All my family members loved it and they told me to make it again and again. I deleted the recipe screenshot by mistake once and I felt horrible... I forgot the recipe and didn't note it down elsewhere. Back again making another recipe from our favourite retired cook from the north.
My wife decided to go gluten free so to cheer her up I made this cake with gluten free flour.
To all of you wondering if it works gluten free? Yes it does.
Now I’ll be honest, gluten free doesn’t taste nearly as good as using normal flour but with this recipe especially you saturate your cake in fruit juices and it helps off set it.
It went down really well, I even had a slice or two myself.

I have been testing different homemade gluten free flour mixes and they can taste amazing, according to the mix one uses. You can add 20 grams of almond flour or teff flour to a cup of your bought mix. Teff has a wonderful nutty taste; it is a grain native to Ethiopia. Different mixes will have slightly different results, but I usually start with 60% structure flour (can be just one or a mix of rice flour, oat flour, teff, amaranth, polenta/corn flour, millet, sorghum, etc) + 25% softening flour (corn starch or potato starch) + 15% binding flour (tapioca starch or arrowroot). You may need to add 1-2% xantham gum, but cakes with fruit or vegetable purees or with a good amount of oat flour, usually don't need it. Also, anytime you change flours in GF mixes, you will need to adjust the amount of liquid in the recipe... so in gluten free baking one goes mostly by the hydrated look/point of the batter; also GF cakes tend to take more time to bake and thus loose more water in the process and to correct this GF batters need a need bit more (around 10%, depending) of added moisture.

Hello John discovered this recipe and your Channel, amazing! You have some awesome recipes! I am not a big Baker or Cook for that matter at all, but every now and then bake a cake and being a Citrus fan, could not wait to try this. Yesterday it was pouring with rain and couldn’t be bothered to go out to the shops so decided to bake it with what I had in the cupboard! The only difference in a couple of the ingredients was the sugar and oil! I had coconut oil and olive oil. I thought I had just about enough coconut oil but ran out half way measuring it, so then added the olive oil to make up the quantity required. I only had raw caster sugar, but used it anyway and thought well we will see how it turns out. As I’d used some olive oil I was worried that taste would come through so I added a teaspoon of vanilla extract! Can I say it turned out fab and delicious!! I was sorry I didn’t have the icing sugar to finish it, but after covering it with the lemon and orange juice, I sprinkled it lightly with caster sugar! I cannot wait to try some more of your recipes now, but will make sure I have sunflower oil as a staple for your recipes! Also can I just say your tips are so helpful, even down to the oven temp! Im lucky that I have a meyer lemon tree in back yard that bears fruit all year round. This cake will be a stable along with your banana cake in this household. I might incorporate some pine nuts into this cake.
