    Beautiful dish Chef....Bravo! It has such a beautiful, wavy, rich mahogany look and I can just imagine how wonderful it tastes. The very least we can do when we kill an animal for food is to show reverence by using every part of that creature. This will be on my New Years table....I will share my video with you and perhaps you can review my effort! Happy Holidays!!!

    havent eaten it in years ... (pun intended). used to eat it cold, jelly like with the strips of crunch

      It has to be eaten cold, other wise all those gelatine will be melt.

      I DONT KNOW WHERE YOU LIVE BUT IF YOU GOOGLE FOR BRAZILIAN BUTCHER DEFINITELY YOU GOING TO FIND . I'M LIVING IN LONDON UK AND ALWAYS I BUY MY P.E FROM THERE.

      In the US, usually available at Asian Markets. Where I live is a store called Global Foods. Mostly caters to Eastern Europeans, but also has large section devoted to Chinese, Vietnamese and Filipino cuisine. It’s where I get my 5th quarter meat, tongue, trotters, tripe, etc. will get some pigs ears and try this.

    The problem in UK with the pig ears...is very hard to find to buy 😕 All the pig ears area going to the pet shop 😢 😞 😕 😫
