My husband and I made this. We followed the recipe to a tee. It was so easy and the best tasting spam I've ever had. Alot cheaper then buying it in the stores. We will be making this again.

Growing up on a farm, you sound like the person for my question. Did your Mom only use pork, or did she ever use any other meats like venison? I quit eating pork years ago but used to love fried spam, egg, and cheese sandwiches. I've always got a deer in the freezer....

I've been inundated with comments about my knife being dull, needing to be sharpened or I don't know how to use a knife. My knives are as sharp or sharper than yours. My hands are partially paralyzed and I have major difficulties holding the knife which makes cutting appear to be laborious. Hopefully this will clear things up about my 'dull knives'. Thanks!

Watching your video for the first time, i thought that it mustve been due to the knife being dull. But upon reading your comment, i came to understand why. I like fried spam and eggs with pan toasted bread. My grandmother would make it for me when I would stay with her. This was the days before running water in the houses. She would get the hand grinder out and if I was good, I could turn the grinder. I'm saying all of this because it brings back many wonderful memories. We also ate a lot of SPAM in the navy. Most of the guys complained, but almost all ate it. The reason I'm responding to this is because so many of you have ridiculous negative comments. It gets to be a competition of idiots not relating to the main topic. I liked the video. I feel inspired to try this, may add some garlic and sage. Those spices go good with pork and lamb. Quit nit-picking (the task of pulling the egg or young form of a louse or other parasitic insect)on the knife.
Bang on! My mum had a hand grinder for meat and I used to push the bread through at the end. Any Sunday roast left overs became Monday's mock roast with a thick gravy with spuds.

James, I also like fried eggs and spam on toast, with ketchup drizzled across the top. I grew up eating this regularly for breakfast. Spam has been around for since the first world war (if I'm not mistake) and people have been enjoying it for decades. It tends to be high in sodium, but my mum used to say 'everything in moderation'. My Step Father was a Marine in WWII- In the South Pacific. His hatred for Spam was Legend! Claims to have eaten it for months on end while in active duty. We would every so often give him a can for his birthday or Christmas(as a gag gift). So every time I see Spam I think of him! LOL
I found this video a few months ago. I made my own batch and canned it so it was shelf stable. Unfortunately it was SO GOOD that my husband and his father had eaten all six pints in a couple weeks! @@zonawatson70when canning use CLEAR GEL instead of cornstarch. After filling jars (leaving 1" headspace) take the handle of a wooden spoon and punch a hole down to the bottom and in the center of each jar. This will help with even heating (no cold spot in middle).

@@bellabreault1992 yes! I vacuum seal it and it’ll stay in the freezer for a long time. If you don’t have a vacuum sealer, wrap it tightly in plastic wrap and then put it in a ziplock bag. It’ll be fine.
@@craigdugan3443 load meat to canning jars. bake it same way first day, Then second day for 1 hour and on third day just 45 minutes. This way you preserve it and can keep it in basement for good few months,
I am old enough to remember what real spam use to taste like. When they changed the recipe I stopped eating it years ago; until now. I have made this twice this month, and there is no comparison between this fresh made spam; and the unknown ingredients in mass produced spam. Absolutely worth the small amount of time it takes to make this. I would never buy spam from any store, at any price; ever again. Thank you for sharing.
You hit the nail on the head! When they changed the ingredients in the early 2000's by adding potato starch, I too was extremely disappointed. It seems that Hormel decided that SPAM needed improvement. Stupid. I called Hormel to complain, and ran around for a few months looking for the old style in supermarkets and was able to accumulate a small supply, but of course it eventually ran out. Now I am stuck eating the inferior recipe. I think I will try this recipe. I guess you can guess I am a bit of a SPAM fanatic:)

My dad loved it...bought a can and cut it in blocks and ate it while watching rugby. His was bought. Imagine I had this recipe he would have spoilt by me making his favourite treat. He loved it because it reminded him of his childhood. In SOUTH AFRICA its called bully beef but nonetheless the same thing! I just made this! It's in the oven right now, I tweaked the recipe slightly and added a healthy teaspoon of onion and garlic powder so I will update and how it tastes. Thank you for the video! P.S I don't eat tofu so I used my bare hands to mix it.
Well to be 100% honest it was kinda gross. I don't have a grinder anymore so I used a food processor and ground it as much as I could but I think that may have been part of the problem. The fact I tweaked the recipe might have also been part of the issue.
The bone that the meat is cut from could the base of a bone broth, then the liquid from that bone broth could be used as the salt + sugar + starch curing liquid. This would ensure that the end product has plenty of gelatin from the bone.
Anyone complaining about mixing something at home with their hands just don't a) cook at home, or b) wash their hands. You can make tofu at home too, and it's usually done by hand. Great vid, I'm gonna try this tomorrow. Thanks!
Gelatin isn't a by-product of fat. it comes from connective tissues (tendons, ligaments,) or bones. The closer the meat is to bone, or if you use meat that's on the bone, you'll get more gelatin.

I love SPAM, even after they changed the recipe! I tried your recipe, but to be frank, something about it wasn’t quite right for me. Flash forward a few months. Today I made another batch but this time I did not add any sugar and added about a pinch more kosher salt. This did the trick for me, perfect SPAM, jelly and all!!

The gelatin is not fat and does not come from fat, it comes from the breakdown of collagen fibers liquefying under heat. The most probable reason for there being less in spam sold now is because Hormel is recovering that gelatin for use as a pork flavoring in other products (gravy, pork flavor packets for ramen noodles, etc.).

I grew up on oahu. Spam is a cultural icon there. We have hurricanes that shut down everything especially electric power. This is part of our survivalist food. The store shelves empty out of TP, rice, batteries and spam first before all other supplys.
Co-worker of mine is native Hawaiian. According to him, one of the agreements he made with his wife prior to marriage is that there would always be no less than a full case of spam in the pantry. Anything less would be grounds for divorce!
I ate Spam on occasion growing up, and always enjoyed it with eggs for breakfast. I spent 6 years on Oahu. There was a little place to get food back by the shipyard on Pearl Harbor that introduced me to Spam sandwiches, made with fried egg and cheese. I would eat them for breakfast 2-3 times per week.
@@RC.41 During WWll the US had military bases in Hawaii. A lot of Spam was shipped over there as part of the rations because it was safer and more economical than shipping fresh meat. Because rations in that region were plentiful, some was shared with the locals, who immediately loved it. After the war there was a surplus of the product still on the bases, the military had gone back to standard supply orders as there was no longer a need for tight rationing. The locals benefited once again and a trend was born. Word spread through the islands and soon orders were coming in to the company for large shipments to various islands, and it grew from there. Hawaiians are big on pork products as they have more pigs than cows, so it was only natural that they would take to the product. My father was in the Navy during WWll and had first-hand experiences with this.

I've done this in mason jars before in the pressure canner. yum. I really like the loaf pan method. My next experiment will be to use my snausage-stuffer to make spamdogs. I"ll serve them with velveeta and miracle whip on wonder buns !

Growing up (extremely) poor, macaroni with spam and mixed vegetables was one our staples. You'd think I would have gotten tired of it, but even now when I'm pretty well off, I still eat it occasionally.
Same here. I know dozens of people who refuse to eat the foods they grew up on. Even after I realized how poor we were, beans, rice, potatoes, etc, still tastes good if cooked with love and tasty seasonings.

Same ingredients as canned spam. It's just cooked different. That's why it looks different. Theirs is put in can and cooked 8k cans per batch. Also less fat is used so it has less calories
Its not healthier. Same ingredients as the canned variety. This is something you want to avoid. Saying it is better than canned spam is like saying a dog turd is better than a cat turd.

Outstanding brother, I love spam and growing up with my grandma who is no longer with us, made me and my brothers eat canned spam almost everyday back in the early 90s. She loved spam because she grew up during the great depression and grandpa served in WWII

Thank you for this recipe. I plan to try it as soon as my sister arrives. It wasn't a staple in our diet, but Mom did occasionally buy the canned Spam back in the 50s and sixties and fry it up for sandwiches on weekends and school breaks. Loved it. And I'm looking forward to trying your recipe.

Well Tender quick does have sodium nitrates in it. That's what gives it the bright pink look. But so does celery so I dont understand why people are so afraid of it?

Oh man, I spent a fair amount of time in my youth consuming Spam. We we're quite poor and I was told this as a type of meat. I guess a should have suspected the truth sooner but I was not exactly the sharpest knife in the drawer. I've had Spam baked, braised, fried, boiled, raw, with this fruit by and that fruit, this vegetable or that vegetable, sliced, diced, diced and pickled, with eggs, with tabasco, with collard greens. When I left home, I made myself a promise that I would never again eat spam. A promise I kept for 40 years now. I'm sure your spam is far superior. to the store-purchased canned product but I might be willing to try it if we call it something else.

We took this recipe one or two steps further. (it's in the oven now) We 1st did a coarse ground on the pork butt (4 lbs) added 1 lb of ham and a pound of bacon to replace the missing pound of pork then did a med grind then mixed in the water mix and did a fine grind then packed it into the loaf pans. Came to about 1/4" over the top of both pans. If you want to know how it turns out, respond to this comment and I'll let you know tomorrow.

ok, i did the deed! i did not add the cornstarch... primarily because i was out and then i thoroughly forgot about it when i was in the store. it did change the texture of the spam which i knew would happen. but, that's ok because it turned out great! so much better than the can! i can identify what is in it - and - it's actually meat not some pink slab sliding out of a can. and the recipe is simple and so easy to do! you are my inspiration!

I made a burrito with the Spam I had left. sliced it super thin, cooked eggs like flat sort of, and wrapped them in a flour tortilla with my delicious Piri Piri Potuguese hot sauce. YUM
Yeah, her recipe was pretty simplistic. You just essentially just cook the rice, fry up the eggs and spam and green onion and then mix it all together. In my version, you also toss it with about 2 tablespoons of soysauce and 1 tablespoon of water at the end. I also usually add some vegetables, like broccoli. And stir fry some garlic and ginger into it. You could also use some marjoram and apple cider vinegar when you're frying the spam and salt and pepper to taste and it's good :P
My first time making this recipe was a success. I did made a couple changes. Why grind the ham and pork separately only to combine them later? Let the grinder help blend the two meats together. I cubed all the meat and added the seasonings then I ground, added water and gave a final mix by hand. I also started with a six pound boneless shoulder and trimmed off about a pound of fat. Yes fat is flavor, but fat is also, well fat. The next time I make this I'll cook it an hour or so in the oven to firm up the loaf, then remove it from the pan and complete the cooking in the smoker.
I never noticed a dull knife or any other handicap. Some people are just idiots. I was concentrating on the recipe and the ham. I love ham in any shape or form. This is something I might try but maybe not as much as you made. It's only for me.

My history professor was going over his research with the class and shared what he holds to be a strong hypothesis that World War 2 was started and fueled by the introduction and subsequent shortage of SPAM in the Eurasian territories. That both the Germans and Japanese surrendered to the Americans over the Soviets because of knowledge of their strong supply of SPAM. The Italians overthrew fascism for SPAM. Everyone feared that the Communists would deny access to American SPAM. Poland and Hungary hated the Soviet Union because of it.
James, I also like fried eggs and spam on toast, with ketchup drizzled across the top. I grew up eating this regularly for breakfast. Spam has been around for since the first world war (if I'm not mistake) and people have been enjoying it for decades. It tends to be high in sodium, but my mum used to say 'everything in moderation'. I enjoyed watching it being made in this video.

My Step Father was a Marine in WWII- In the South Pacific. His hatred for Spam was Legend! Claims to have eaten it for months on end while in active duty. We would every so often give him a can for his birthday or Christmas(as a gag gift). So every time I see Spam I think of him! LOL

I found this video a few months ago. I made my own batch and canned it so it was shelf stable. Unfortunately it was SO GOOD that my husband and his father had eaten all six pints in a couple weeks! After filling jars (leaving 1" headspace) take the handle of a wooden spoon and punch a hole down to the bottom and in the center of each jar. This will help with even heating (no cold spot in middle).

@@bellabreault1992 yes! I vacuum seal it and it’ll stay in the freezer for a long time. If you don’t have a vacuum sealer, wrap it tightly in plastic wrap and then put it in a ziplock bag. It’ll be fine.

I am old enough to remember what real spam use to taste like. When they changed the recipe I stopped eating it years ago; until now. I have made this twice this month, and there is no comparison between this fresh made spam; and the unknown ingredients in mass produced spam. Absolutely worth the small amount of time it takes to make this. I would never buy spam from any store, at any price; ever again. Thank you for sharing.
You hit the nail on the head! When they changed the ingredients in the early 2000's by adding potato starch, I too was extremely disappointed. It seems that Hormel decided that SPAM needed improvement. Stupid. I called Hormel to complain, and ran around for a few months looking for the old style in supermarkets and was able to accumulate a small supply, but of course it eventually ran out. Now I am stuck eating the inferior recipe. I think I will try this recipe. I guess you can guess I am a bit of a SPAM fanatic:)

I added a whole onion to the cubed meat then ground it all together.
Well to be 100% honest it was kinda gross. I don't have a grinder anymore so I used a food processor and ground it as much as I could but I think that may have been part of the problem. The fact I tweaked the recipe might have also been part of the issue.

The bone that the meat is cut from could the base of a bone broth, then the liquid from that bone broth could be used as the salt + sugar + starch curing liquid. This would ensure that the end product has plenty of gelatin from the bone.

Gelatin isn't a by-product of fat. it comes from connective tissues (tendons, ligaments,) or bones. The closer the meat is to bone, or if you use meat that's on the bone, you'll get more gelatin.
I've never heard anyone use "go eat a piece of tofu" as a replacement for "go eff yourself", ROFL!

I love SPAM, even after they changed the recipe! I tried your recipe, but to be frank, something about it wasn’t quite right for me. Flash forward a few months. Today I made another batch but this time I did not add any sugar and added about a pinch more kosher salt. This did the trick for me, perfect SPAM, jelly and all!!

We make this "Spam" regularly and sometimes my wife adds bacon to the mix. Our family, friends and neighbors love it. It has many uses.
The gelatin is not fat and does not come from fat, it comes from the breakdown of collagen fibers liquefying under heat. The most probable reason for there being less in spam sold now is because Hormel is recovering that gelatin for use as a pork flavoring in other products (gravy, pork flavor packets for ramen noodles, etc.).

I grew up on oahu. Spam is a cultural icon there. We have hurricanes that shut down everything especially electric power. This is part of our survivalist food. The store shelves empty out of TP, rice, batteries and spam first before all other supplys.
Went there recently. I LOVE macadamia nuts. I was in Walmart and they had Spam flavored macadamia nuts. I laughed and thought, "Only in Hawaii!"
Co-worker of mine is native Hawaiian. According to him, one of the agreements he made with his wife prior to marriage is that there would always be no less than a full case of spam in the pantry. Anything less would be grounds for divorce!

I spent 6 years on Oahu. There was a little place to get food back by the shipyard on Pearl Harbor that introduced me to Spam sandwiches, made with fried egg and cheese. I would eat them for breakfast 2-3 times per week.
@@RC.41 During WWll the US had military bases in Hawaii. A lot of Spam was shipped over there as part of the rations because it was safer and more economical than shipping fresh meat. Because rations in that region were plentiful, some was shared with the locals, who immediately loved it. After the war there was a surplus of the product still on the bases, the military had gone back to standard supply orders as there was no longer a need for tight rationing. The locals benefited once again and a trend was born. Word spread through the islands and soon orders were coming in to the company for large shipments to various islands, and it grew from there. Hawaiians are big on pork products as they have more pigs than cows, so it was only natural that they would take to the product. My father was in the Navy during WWll and had first-hand experiences with this.

I've done this in mason jars before in the pressure canner. yum. I really like the loaf pan method. My next experiment will be to use my snausage-stuffer to make spamdogs. I"ll serve them with velveeta and miracle whip on wonder buns !

Same ingredients as canned spam. It's just cooked different. That's why it looks different. Theirs is put in can and cooked 8k cans per batch.

Oh man, I spent a fair amount of time in my youth consuming Spam. We we're quite poor and I was told this as a type of meat. I guess a should have suspected the truth sooner but I was not exactly the sharpest knife in the drawer. I've had Spam baked, braised, fried, boiled, raw, with this fruit by and that fruit, this vegetable or that vegetable, sliced, diced, diced and pickled, with eggs, with tabasco, with collard greens. When I left home, I made myself a promise that I would never again eat spam. A promise I kept for 40 years now.
I'm sure your spam is far superior. to the store-purchased canned product but I might be willing to try it if we call it something else.

We took this recipe one or two steps further. (it's in the oven now) We 1st did a coarse ground on the pork butt (4 lbs) added 1 lb of ham and a pound of bacon to replace the missing pound of pork then did a med grind then mixed in the water mix and did a fine grind then packed it into the loaf pans. Came to about 1/4" over the top of both pans. If you want to know how it turns out, respond to this comment and I'll let you know tomorrow.

ok, i did the deed! i did not add the cornstarch... primarily because i was out and then i thoroughly forgot about it when i was in the store. it did change the texture of the spam which i knew would happen. but, that's ok because it turned out great! so much better than the can! i can identify what is in it - and - it's actually meat not some pink slab sliding out of a can. and the recipe is simple and so easy to do! you are my inspiration!
I'm a Spam lover, I'll eat Spam straight out from the can, most of the time, I won't cook it before eating.
I havent eaten spam (or other similar canned meat) for at least 20 years but this recipe looks really good. I can still remember the last time, it was in a sandwich with mustard...mmmmm!!!

Spam saved many Russian solders in WW2 also. And the country, [CITY?] that buys the most Spam is Hawaii. It is all the rage there. Their McDonalds serves it with eggs...I love Spam. In fact I have a small piece left in the frig. so gonna go eat it right now. Wonder how Spam taco's would taste...yum

I made a burrito with the Spam I had left. sliced it super thin, cooked eggs like flat sort of, and wrapped them in a flour tortilla with my delicious Piri Piri Potuguese hot sauce. YUM

Yeah, her recipe was pretty simplistic. You just essentially just cook the rice, fry up the eggs and spam and green onion and then mix it all together. In my version, you also toss it with about 2 tablespoons of soysauce and 1 tablespoon of water at the end. I also usually add some vegetables, like broccoli. And stir fry some garlic and ginger into it. You could also use some marjoram and apple cider vinegar when you're frying the spam and salt and pepper to taste and it's good :P

My first time making this recipe was a success. I did made a couple changes. Why grind the ham and pork separately only to combine them later? Let the grinder help blend the two meats together. I cubed all the meat and added the seasonings then I ground, added water and gave a final mix by hand. I also started with a six pound boneless shoulder and trimmed off about a pound of fat. Yes fat is flavor, but fat is also, well fat. The next time I make this I'll cook it an hour or so in the oven to firm up the loaf, then remove it from the pan and complete the cooking in the smoker.
I laughed at the "go eat a peice of tofu" remark. Absolute perfect roast 👌
Made this yesterday and enjoying today. Tastes almost exactly like SPAM. Tad dry though. Temp was around 168* after 2 3/4 hrs. Easy and tastes great!
