Yes this can totally be used for layering :) the recipe does require the cocoa though so not sure how that will work with a white velvet cake but maybe you can add in an extra tablespoon of flour in replacement of the cocoa. Hi there! Yes you should be able to make these into cupcakes but the baking time would be shorter and I would bake it at anywhere between 150-165C no higher otherwise the cupcakes will rise too high. Hope that helps :)

Hi there! If using cake flour that doesn't have any leavening agents in it, simply add in 1 and 2/3rd cup of the cake flour in replacement of the flour and cornflour (so don't add any cornflour). All other ingredients will be the same :)

Hi there! Sinking most commonly occurs if you check the cake too early and too much air rushes into the oven causing it to sink :)
