Made them for dinner tonite and they came out perfect !! So easy to make. The trick is to turn them on their sides, flipping them makes them crispy and delicious . Thank you Robin. Also I only had the small yellow potatoes so they came out bite-sized!! Yummmm :)
I actually use the dry beef broth packets for the oil mixture, and I don't add extra salt. It makes them come out darker, and have a very rich flavour. Chicken or veggie packets work just fine as well. I also find it good practice not to use olive oil in the oven, due to the temperature restriction for the chance of smoking. I'll use canola, sunflower, or vegetable oil instead.

I humbly suggest that when you lay these out, you face them in all the same direction, so that if you get distracted with a phone call or something mid way through turning them over, you'll know which ones still need to be turned. I don't like olives and, therefore, olive oil. I'd use a flavorless oil. I dislike potato skins as, no matter how much you wash them, they taste like dirt. It's just what skins taste like. I'd use Russet, non-organic, potatoes as they are much larger making better wedges. I don't worry about pesticides because I throw the skins away, plus I've been eating them for 70 years without any problem. I think it's just a scare tactic allowing them to charge more. (Why does "organic" produce cost more if they don't have the cost of using fertilizers and pesticides?). I saw a video that says not to use freshly grated parmesan as it clumps up, but to use the stuff in the can. I'm not a big fan of the can stuff, but it is better for this recipe. With my changes, this is a great recipe.
how long will it stay crispy for? if i need to bring this as a potluck for office party or something.. just wondering.. so it doesnt turn soggy when its time to eat... thank you and keep up the great work :)
miraclemaui That's a tough one. I would say just don't seal them up real tight if they are warm after you make them. The heat will soften them. They will still taste good tho! :)

A lot of things that say organic really aren't because sometimes they slap an organic label on it just so they can charge more and as a consumer, you really don't know; it is supposed to be checked by agriculture inspectors, but there are not enough inspectors to go around.

late reply but half of the fresh as dried herbs are concentrated in terms of taste as compared to fresh herbs :)
