    Robin,
    I have a suggestion for you.
    Take an 8 oz container of sour cream and blend in about 2 chopped green onions, a pinch of salt and fresh ground pepper. Mix together and let sit in fridge while you cook your potato wedges.
    Serve as a dip or a topping for your potato wedges.
    Yummy!

    We grow our own rosemary too, and you're absolutely right... they are amazing on potato wedges. They go great with burgers too!

    Made them for dinner tonite and they came out perfect !! So easy to make. The trick is to turn them on their sides, flipping them makes them crispy and delicious . Thank you Robin. Also I only had the small yellow potatoes so they came out bite-sized!! Yummmm :)

    I add old Bay seasoning to my olive oil. With some paprika and garlic powder. I need to try the rosemary

    I actually use the dry beef broth packets for the oil mixture, and I don't add extra salt. It makes them come out darker, and have a very rich flavour. Chicken or veggie packets work just fine as well.
    I also find it good practice not to use olive oil in the oven, due to the temperature restriction for the chance of smoking. I'll use canola, sunflower, or vegetable oil instead.

    I love roasted potato wedges!! I make mine much like yours - but I've never tried fresh rosemary before - or butter (I only use olive oil). I really want to try your recipe now!! Sounds delicious! Oh, I also like to sprinkle mine with onion powder in addition to the garlic powder! Your videos are great! So helpful!

    Follow up comment... I made these today. Loved them! I had to add some additional heat, since I love a little extra kick. I humbly suggest that when you lay these out, you face them in all the same direction, so that if you get distracted with a phone call or something mid way through turning them over, you'll know which ones still need to be turned.     They look delicious Robin and TY for sharing. I make mine pretty much the same way using more chopped garlic and minus the rosemary. I'm not a big fan of rosemary though I do like it on chicken.

    My Family loves it! I don't have to let them cool because my kids eats it as it comes out in the oven 😉 I actually quadruple the recipe and have to keep some for my hubby or else these kids will eat them all 😀

    Thank you, they seem really delicious.
    Have you tried to lightly beat egg whites in large bowl with some chilli flakes, until frothy but still transparent, and then add the wedges in that mixture before sending them into the oven?

    I don't like olives and, therefore, olive oil. I'd use a flavorless oil. I dislike potato skins as, no matter how much you wash them, they taste like dirt. It's just what skins taste like. I'd use Russet, non-organic, potatoes as they are much larger making better wedges. I don't worry about pesticides because I throw the skins away, plus I've been eating them for 70 years without any problem. I think it's just a scare tactic allowing them to charge more. (Why does "organic" produce cost more if they don't have the cost of using fertilizers and pesticides?). I saw a video that says not to use freshly grated parmesan as it clumps up, but to use the stuff in the can. I'm not a big fan of the can stuff, but it is better for this recipe. With my changes, this is a great recipe.

    how long will it stay crispy for? if i need to bring this as a potluck for office party or something.. just wondering.. so it doesnt turn soggy when its time to eat... thank you and keep up the great work :)

      miraclemaui That's a tough one. I would say just don't seal them up real tight if they are warm after you make them. The heat will soften them. They will still taste good tho! :)

    I use olive oil, parmesan cheese, crushed red chilies, fresh grated garlic, fresh parsley and fresh lime juice salt to taste.
    However I try your recipe over this weekend.

      My recipe was the same as yours except, I had no butter ,cheese , and rosamery except I used olive oil Italian herbs,paprika salt pepper and my oven was 220 degrees Celsius for 45 mins

      late reply but half of the fresh as dried herbs are concentrated in terms of taste as compared to fresh herbs :)

    why dont you boil the potatoes before seasoning and roasting in oven?

      You could do that however, if you precook them by boiling first, the potatoes won't have a long enough time to roast and get crispy on the outside which is really where you get the best flavor.

    How long do I need to cook them if my oven goes upto 200 C? I cooked for 35 mins and they turned out to be soggy.

      +Amox Cook your potatoes as hot as you can (200 C) on the bottom rack of the oven. Maybe 30 minutes and them turn them over and cook an additional 20 - 30 min. Don't use too much oil and butter. See if that helps.

    Noticed what she said about the potatoes, she did not say it exactly, but she was talking about GMO (Genetically Modified Organisms) or (God Move Over) Well said though the way she explained it.

    A lot of things that say organic really aren't because sometimes they slap an organic label on it just so they can charge more and as a consumer, you really don't know; it is supposed to be checked by agriculture inspectors, but there are not enough inspectors to go around.
