Yes indeed, each instrument has its own "sweet spot", and the bridge and string height make a big difference, as much as the Bass bar length and shape and the sound post length and placement. The tailpiece length and mass also make a difference. I recently put an Otto low-mass tailpiece on my student violin and it really woke up the instrument.
What about the curvature? Recently I'm learning a piece which requires high position on the D string, and I found that at that position my D string is almost entirely buried under the G and A string except for a tiny spot near the bridge. My E is about 4mm and G is about 5.5 just as you mentioned in your video. I wonder if I should visit my luthier and have them retouch the bridge for me. Since the E/G is already at the lower end and it's unlikely to rise the D, do they have to make a new bridge? Thank you!
Why does the Bridge piece have many cut-outs? What is the "science" behind this? Why not have a simple solid bridge piece? Mine, like yours looks like an Alien Invader? 👾👾👾 I know, that's like asking why "f" holes are the shape they are!
Wow. I didn’t even realize that about the bridge movement. That’s neat.

Correct me if I'm wrong, but certain violins will lose brilliance if you set up with a lower bridge
