0:39 Gather materials
1:08 Make pickles
1:15 Slice onions and toss with salt and vinegar
1:44 Mise en place
1:47 Slice garlic
2:18 Prep mushrooms
2:47 Grate cheddar
3:04 Cook mushrooms
3:05 Heat oil over medium-high heat
3:13 Add mushrooms and let cook undisturbed until browned
3:27 Grind spices
3:38 Grind cumin, coriander, oregano, fennel, and paprika
4:24 Toss mushrooms and season with salt
5:10 Add garlic and toss
5:23 Add ground spices and butter
5:28 Cook, tossing often
6:07 Season with more salt
6:00 Transfer mushrooms to plate
6:10 Rinse skillet
6:13 Cook quesadillas
6:15 Assemble quesadillas in pan
6:30 Cook both sides over medium-low heat
7:03 Pick cilantro
7:58 Plate and top with hot sauce

Mushrooms are a very traditional quesadilla filling in parts of Mexico. Although I don't like flour tortillas or cheddar for quesadillas, mushrooms with quesillo or queso chihuahua (or no cheese at all) is delicious especially with a little epazote.
Budget bytes has a bean based quesadilla that really rocks if you add some mushrooms

4:47 is the main reason I'm vegetarian and not vegan. Some things just can't be replaced (yet)
If you haven't yet, try Miyoko's Cultured Vegan Butter, It's not EXACTLY like real butter but in terms of its behavior during cooking (browning, melting, etc) and taste, it's extremely close.
@@SkipRainsmyth Thanks for the tip! Unfortunately I've never seen that brand in any stores near me. Generally it seems like vegan options in America are better executed in terms of realism than over here in Denmark (in my experience) especially when it comes to vegan cheese. I can't find any brand here that melts like dairy cheese.

In San Antonio many places will custom make tacos for their customers. I usually ask if they have mushrooms, and if so, then I get a mushroom taco with queso blanco cheese, cilantro. and onion.
It's so interesting how opposite the two approaches to cooking mushrooms is. When I was in cooking school we started with water and then oil. I see about a 30:70 ratio here on yt videos. Love this recipe though gonna try it, but gonna cook them differently lol. Never thought to make quesadillas

If I'm trying to be quick, I'm using the pre shredded packaged cheese instead of grating my own. It's less about the time it takes to grate, and more about not wanting to wash the grater. I've been known to matchstick cheese with a knife to avoid washing a grater.

A lot of people feel that a "vegetarian" meal sounds like a "meal for vegetarians". Even non-vegetarians can eat "plant-based meals" occasionally without identifying as a "vegetarian".

Hopefully someone reads the comments - My mortar and pestle is marble and seems very porous. I wipe it out, not wash it, with spices. I’m afraid soap will soak in. I want to use it for garlic and ginger as well as making different pastes. How do you/should I wash it?

There is high quality vegan butter available pretty much everywhere, and 99% of people won't be able to tell the difference in taste. Please try to use those options if you're marketing as "plant-based".
Where did they market it that way? The people who want that butter know about it, and the people who don't have no need to. :) It's good to encourage people to use what they already have instead of going out and buying specialty butter for one recipe

This seems a bit tight to call it 15 minutes tbh, mushrooms take a while to cook down to evaporate water and then start searing and then you gotta cook the quesadilla again after. Not realistic!

I really hate these recipes. There were so many ingredients, and this is so high in fat and carbs and virtually no protein. Bon Appétit focuses way too much on perfection of traditional recipes and maximizing flavors and never once take make-ability let alone nutrition into consideration. People don't cook like that anymore. People are watching their weight, and they're spending more time working, meaning they have less time to spend in the kitchen.
This series’ primary function is not as a set of recipes meant for us to follow… it’s testing Chris’ abilities.
