    - Some dehydrators don’t have a heat setting. In that case the heat setting it uses is usually either 160-165f, aka the perfect range.

    I have been dehydrating for four hours, and then letting them sit in the dehydrator for a minute, so that any moisture that’s deep inside of the mushrooms gets dispersed again and then I run it for another hour or so. 24 hours seems like a really long time but I’m new so I will default to doing it for longer. Thanks for the PSA.

    Even after 24 hours of dehydration, I put my fruits in my desiccation chamber for a couple days, then my jars all have sachets full of desiccant.
    Maybe it's overkill, but at least I'm not topping the jars off with CO2 yet for long term storage.
    I have some B+ that are over ten years old. I'm a little bit worried because of years of bro science indoctrination attempts...
    but I'm going to make a technical lemon smoothie and I'm thinking I should maybe... maybe, go higher than 3.5 because the flavor may have faded, but if they still taste as good as they originally did, 5g would add too much umami and I would have a possible difficult culinary event. We'll see. They still taste delicious and are as health inducing even at tiny amounts. I figure If I can still clearly taste the flavonoids at 100mgs after 10+ years, I don't want to accidentally be a hero and make my smoothie too delicious.

      After realizing how much we over-complicate things, I tried to do the simplest possible and also the thing I would think would be most destructive to the flavinoids, so I put them out in the sun to dry. It's hot as fuck where I live so it was like 90 degree air and then the sun heating the fruits up way beyond that, and the worst part is the UV light which completely destroys these compounds pretty much instantly in aqueous and powder forms.
      It dried them surprisingly well, I didn't use any silica gel or anything and just put them in a sandwich baggie (not even ziplock) and set them in a dark cabinet for a few years. When I took them out and tested them, they were just as flavorful as any other from that isolate. I did not expect that result at all, I was terrified since I grow plants so my house is at like 50-60RH all the time and they should have just soaked up enough water to degrade in all those years (about 4 years I think?)
      I still use silica gel in my storage containers, but only because sometimes I screw up and think a batch is completely dry but really I had added a few things to the dehydrator and forgot they weren't all in there for the same amount of time. But I'm not worried that totally dry fruits are going to soak up normal household humidity levels in storage.

I know I should probably just harvest the entire thing but I harvested anything near the contamination and surgically cut out the trich area in its entirety. According to Alan Rockefeller (not a noob) temperature, light and air are the enemies of flavor. According to him, thoroughly dried out, vacuum sealed, stored in a dark container, in a cool room, will retain flavor for “decades”…. Hmmm. I’ll eat them before that.

    just finishing up drying a 2 kilo harvest. I found by trial and error it took a minimum of 20 hours @ 150-155 degrees to thoroughly dry my harvest, so thanks for confirming my results. powder I keep only in jars, whole dried fruits I've been using purpose made heat sealable plastic heavy zip lock bags (Not sandwich bags) as they take up less room and are safer than breakable jars, since I use plastic bags for my grain spawn I already have a heat sealing tool on hand. Also the next step for me is to preserve powder in honey, it will last indefinitely.

    The best setup I've ever seen was shelves with window screen on them to support the fruits, and then below each shelf there was a bunch of water tubing zig-zagging back and forth so each shelf has like 10 tubes under it lengthwise. With all the shelves lined up so the tubing goes straight through all the shelves then turns around and comes back at the end. At the end of the shelving units the tubing is attached to a pump and a household hot water heater. The natural convection of the heat pushes up through the fruits so no fan is needed.

My fruits came out from cracker to almost powder dry which is good because I want to make some amazing teas for good immune health. I have also eaten them and it is the best! Also if the fruits are properly stored away in a tight seal bag or container with a silica gel pack they last a long time!

    I was worried heat would be bad and was gonna do it at 90°. So many conflicting things people say. But I've found your expertise to be very helpful up till now, so I'll listen to you about this too.
    When i was younger and got some, they were never shriveled cracker dry fruits. It's not wet, but definitely not shriveled, so i thought maybe heat wasn't the best or something.
    Doing research lately, for being 90% water, it makes sense how shriveled they will get.
    Also, it makes sense that they would not dehydrate them all the way to add that extra water weight. Strech them out a little more.
    Thank you for the very helpful information.

    For the subject of grass and poo lovers species, my guess is that they are known to conserve well because they are more common in europe, where specimens have been properly stored for centuries. As for more tropical species maybe we dont have a lot of old well preserved specimens to study.
    It could be that they all conserve their flavors well.

    • @Mycophilia
      @Mycophilia  Год назад +1

      Mexican and Floridian grass lovers are also known to preserve their taste for a long time. It was generally thought that those heavier in the flavonoid itself (rather than the pro-flavonoid) wouldn’t preserve as well, but our understanding of that is changing quickly. Recent evidence suggests that some species produce the same flavonoids through different synthesis pathways, which have a lot of implications, one of which being stability of the end products along with the byproducts that are released throughout their unique processes, which lead to a different range of taste effects. Thank you for your comment!

    I wish I wouldn't have taken your temperature and time of dehydration advice as fact. I don't know how many harvests I practically ruined because of having the temp around 155º till cracker dry. I couldn't figure out why the potency was gone until I started experimenting and doing more research. One type of mushroom I grew lost all potency, and others I harvested elsewhere lost quite a bit of theirs. I then started never going above 125º (122º should be the maximum in general), and the results have repeatedly been far superior. It takes much longer to get cracker dry, but it doesn't destroy the cells and compounds. They're far more potent, and have a much better texture, as if dried naturally.
    I also started sautéing them fresh and have had glorious results with that. Maybe this will help someone else before they diminish or ruin their own with high temperature dehydration.

    • @LarsLarsen77
      @LarsLarsen77 7 месяцев назад

      You can just set up a little diving board off the front of the stove over the oven door by setting something heavy on a cookie cooling rack or something with metal mesh like that and the hot air from the oven will rise through the fruits without a fan. This is also a handy setup for doing sterile work on instead of a flow hood. The hot air coming out of an oven above 250C is sterile.

    The sad thing is, many times I thought I‘d dried my shrooms enough only to reach into the jar and feel they are spongy.
    Do not re-heat or re-dry.
    This reduces potency significantly to almost worthlessness, so better to overdry than underdry.
    I’m still struggling with this aspect.
    Once my dehydrator is done, I wait a couple hours to see if the shrooms stay cracker dry.
    Many times they go spongy again.

    • @Mycophilia
      @Mycophilia  Год назад

      I’m not familiar with air fryers for dehydration so I cannot say. If you’re asking whether different varieties require different dehydration times, no it doesn’t really matter unless you have some huge fruits. Then you could cut them in half to dry them quicker, but for dehydrators as I say 24 hours in a dehydrator will just about always get the job done no matter the size.

    • @Rolandfart

    Any benefit or detriment to slicing the mushrooms, or do you just pop them into the dehydrator whole?

    • @Mycophilia
      @Mycophilia  Год назад +5

      Slicing will oxidize more flavonoids as you’re exposing more surface area to the open air. If space is an issue, I like to lay the fruit on my palm, and gently lay the cap down with my other palm. One part of the cap will disconnect from the stem, but some should still be connected so that you’re not completely separating them (cap and stem).

    • @Mycophilia
      @Mycophilia  10 месяцев назад +2

      If you have to redry your mushrooms, obviously it is not an ideal situation but I'm sure you know that. I would do it if they don't smell like they're starting to rot. As long as the odour is not too pungent. Basically there's two concerns, the first is that you don't get sick from them. And the second is whether the flavonoids haven't degraded due to oxidization.

    • @mikeangelo8833
      @mikeangelo8833 10 месяцев назад

      @@Mycophilia Gotcha. So in this specific scenario, they were dried for about 6 hours and then stored for a few days before being dried again for about 16 more hours, so I wouldn't expect too much flavinoid degradation, no? Thanks so much 👍

      Not nearly as good as storing them dry and without air. It’s a novelty thing but for pure longevity, nothing beats dried. And dosing can be difficult with blue honey as proper honey doesn’t have much water to extract the goods, so what ends up happening is you’re eating powder with honey, and not an actual extract. Now when making blue honey with fresh fruits, it’s even worse as they eventually start rotting and may kill you with botulism. The best extraction method is tea, period. No alcohol or honey or whatever else, just pure water.
