    passion fruit cheesecake is a perfect dessert for summer, it's tangy and creamy at the same time
    crust -
    for three 4'' cakes:
    • 120g biscuit + 45g butter
    for one 6'' cake:
    • 80g biscuit + 30g butter
    cheesecake -
    • 225g cream cheese
    • 60g sugar
    • 150g whipping cream
    • 10g sugar
    • 50g passion fruit juice
    • 50g milk
    • 5g (2 sheets) gelatin leaf
    jelly glaze -
    • 30g passion fruit juice
    • 60g water
    • 25g sugar
    • 5g (2 sheets) gelatin leaf
    ~ makes three 4'' cakes or one 6'' cake

    Thanks for the recipe. Instead of gelatine sheets can we gelatine powder? If yes, how many grams of it should we use?

      I’d say about 4 grams of the powder, and dissolve it in the 60g of water first before adding to the pot

    Hi, I just discovered your channel and really like this recipe! However, I would like to ask should I whip the whip cream to stiff form? My cake is not quite set. I was using 5g of gelatin powder as per describe.

      thank you! the cream should still be a slightly thick liquid. hmm it could be that I used gelatin leaf and you used powder. for powder, did you bloom it -- soak in 10g cold water for 5-10min, then microwave for 10-15seconds

      @eatwithiz thanks for the reply! Oh I bloom the 5g gelatin in the 50g milk. But I feel something is not right because it seems not bloom but very liquidy on the milk. So I should bloom it first before add to the milk?

      @@andrewyee9140 yea try it with the 10g water in a separate bowl first, should also reduce milk to 40g
