Yes you can substitute 1/2 tea spoon of gelatine powder for 1 gelatine sheet

passionfruit contains about 2 tablespoons of pulp including the seeds and 1 tablespoon once the seeds have been removed

About 14 grams per tablespoon and her recipe uses 4 passionfruit so I’d guess 56 grams😊
