It will work with any board honestly. As I mentioned in the first part, if you make a custom mix and send that other a specific out it will work on analog or digital boards as long as you have Aux options which most boards have
The exact same way. Use the 3.5mm cable for audio out and then USB for audio in. If that is not available you will need to get an audio interface for getting the audio in from the mixer.
Our chruch Zoom account has 'permit to unmute' enabled. Is there a way that you, as hos, can turn their sound off,(if somebody is in the sanctuary e.g. needing captions, they can join Zoom but when it asks how to connect audio, then you'd just ignore it)?

As host you should always be able to mute people you might want to set the meeting to mute everyone on joining and then unmute on permission by host.
