INGREDIENTS
2 pound 1/2 ground pork, 200 grams ( 7/8 cup)of pork fat, 39grams( 3 tablespoons) of sugar, 14 grams 3.3 teaspoons)sea salt, 5 grams(1.2 teaspoons) Alsa baking powder , 20 grams (4.8 teaspoons) of corn starch,4 grams( 1 teaspoon) of fish sauce, 15 grams 1.5 tablespoons) of chopped garlic
HOW TO MAKE
Mix all ingredients to bowl and add 4 tablespoon water , and after that pour to meat bow and
mix well all the ingredients and meat together
after that, divide to 3 small portions wrap with plastic wrap and put straight to freezer
you don't have to do at same day but should marinaded meat right away
few hours after or next date, take meat out 1 by 1, cut potion of meat to thin slice pieces ( meat should be frozen ( just a little bit soft) at this point. The key to make pork sausage chewy is keep meat frozen & cold at all time
next after cut to thin slices...add to food processor ( small batch) grind with few short period of time
( please watch video for more detail)
after meat have reached to good point (chewy) take out and slam on cutting board few times before wrap
with 2.5 pounds we can make 3 nice pork sausages
how to wrap meat with banana leaves:

pork sausage will be steamed after wrapped for about 1/2 hour
keep pork sausage in fridge and can be served with lot of dishes

Nhiên liệu:
2.5 pound thịt heo bằm, 200 grams thịt mỡ, 14 gram muối biển, 5 gram bột nổi Alsa, 20 gram bột bắp, 4 gram nước mắm, 15 grams tỏi bằm
Cách làm:
trộn tất cả nhiên liệu vào tô, bỏ thêm vào 3 muỗng canh nước, trộn đều sau đó bỏ hỗn hợp vào trong thịt, trộn đều, sau đó chia đều thịt ra làm 3 phần
Lấy giấy ny lông bọc thịt lại và đem bỏ trên ngăn đá ít nhát vài tiếng đồng hồ cho thịt đong cứng lại
có thể làm qua hôm sau cũng được nhưng thịi nên ướp liền trong ngày
Qua hôm sau , lấy thịt ra , làm từng gói một, để xuống tủ lạnh thường và làm tưng gói
luôn luôn giủ thịt cho lạnh , không đươc nguội, đây chính là điêu làm cho thịt không bị bỡ
Cắt thịt ra từng lát mõng để xay cho dễ và cho máy không bị nóng, xay vài lần cho tới khi thất thịt nhuyễn thì lấy ra ( xin xem video chia sẽ)
đem đập vào thớt vài lần cho thịt săn chắc thêm
sau đó đem gói

chả sẽ hấp trong vòng 1/2 tiếng
2.5 pound thịt sẽ làm được 3 đòn chả rất ngon
Chả làm xong đem bỏ tủ lạnh

What is pork fat?
the fat you can buy extra to make sausage more juicy not dry...you can ask the meat department , some store packed it ready in tray
