I will definitely be trying this recipe. I bought your clay pot over a year ago and I love it, although I sadly broke the lid. I wish the lid could be sold separately for replacement (My arthritis makes me quite clumsy, unfortunately). I also bought two boxes of chopsticks and your carbon steel wok -- love all. Your knives are on my birthday wish list. Love your recipes and I have learned so much from you. I'm so happy that I found your channel.
If you have an Asian grocery near you, you could take your pot and try the steel-edged glass lids they sell in various sizes. Or measure and find one online-they're usually expressed in centimeters, sometimes in inches, too. Hope you find one!
I love to make a clean-out-the-fridge congee with leftover rice in my Instant Pot. I keep century eggs and Chinese sausage in the fridge, vegetables in the freezer, and wood ear mushrooms and Chinese dates (and sauces) in the cupboard, and usually have other interesting tidbits to throw in. Add water or broth, set the IP on Porridge, and voila! (or whatever the Chinese equivalent is) it's congee. (To me, at least.)

Do you need to remove the bitter green shoot from the middle of the lotus seeds? I did not see you do this so I assume the flavor is not affected?
I used lotus seed that is already has the sprout removed so I don't need to do it. But if yours has the green sprout, you need to remove it.

Ok this might be an odd question…I don’t have alllll those ingredients, but still wanted to try it, so I only used black rice, red beans, jasmine rice. While this was yummy, it left me feeling quite bloated. So, wondering if there was a reason behind the rest of the ingredients, like how did they come up with eight? And are some of those ingredients balancing? You may not know, and that’s fine. Haha I’ll eventually gather all the ingredients and try again. Thanks as always, I love love love your show (and cookware).
Can you make this in the rice cooker?
I have in the past and use vegetable or mushroom stocks always making sure to soak everything overnight. (I do not use brown sugar - on occasion a little bit of coconut sugar and more jujubes.)
I think it should work with the porridge mode.

Black glutinous rice?
Thank you for serving the beautiful congee with a wooden ladle. I'm concerned when chefs stick a plastic utensil into a hot pot. Silicone might be safer than plastic but still it makes sense not to leave it in a pot on active heat.
