    I will probably stick to store bought for convenience, but I do love seeing the process! I had no idea how much actually went into making oyster sauce so it was very interesting. I would absolutely love to see more of this!

    Very cool and informative! I’m always impressed how the store-bought oyster sauce, although quite thick in consistency, pours from that narrow glass bottle, even when chilled. Videos for homemade Hoisin, Tamari or dark soy sauce would be interesting.

    I make dark soy sauce using 1 tbsp of molasses and 3 tbsp of reduced sodium soy sauce. You can use GF soy sauce if that's your jam.

    Please feature recipes for the dried oysters. I'm about to do the Keto diet and I will make this recipe. A small batch of course and modify it, so I may end up making full bottles worth. In any case, I would like to try the dishes with dried oysters.

    Hoisin sauce would be great, it's surprisingly hard to find any in Japan that doesn't come in a tin can instead of bottled in brick-and-mortar shops.

    The oysters were huge, I like fried oyster sandwiches. The process takes much time, TY for demonstration but I will buy the oyster sauce bc I won’t be using it that much.

    What a fascinating process, and I can't begin to imagine how much research, trial and error you put into this one Mandy. I would love to see a soy sauce recipe just to understand the process in so much detail like you've done here for oyster sauce.

    I had no intention of making oyster sauce from scratch cause I’ve never questioned the quality of the store bought. I watched the video out of curiosity but you made it look simple and really convinced me there would be a noticeable difference in quality. I might try it out as an activity with friends/family.     This was one of my favorite videos of yours! I am gluten-free and have a number of food sensitivities, so I am SO excited to try your recipe! I would love to see you cook Hoison sauce and fish sauce!

      Fish Sauce isn't exactly cooked, you make it by shoving a bunch of anchovies into a barrel with salt and let it ferment in a basement for a year.

      Usually fish sauce brands manufactured outside of US are gluten free. Three that come to mind are Golden Boy, Red Boat and Squid Brand

    I think this is Mandy's best video so far. I don't necessarily mean best recipe but rather, that it perfectly demonstrates how committed she is to assessing all the varieties of a recipe and then fine tuning the process for us, all while making it seem absolutely achievable at home because she makes the explanation so clear and concise. Of all my fave Asian recipe channels on RUclips (and to be clear - there are a LOT, including greats like Chinese Cooking Demystified, Chef Wang Gang, Marion's Kitchen, Adam Liaw, and Hot Thai Kitchen, amongst others) I think Souped Up Recipes might actually be the best/my fave. Truly, she's already built the channel up so much, and I sooo hope that she absolutely blows up soon, since she deserves any and all accolades that would come her way, in an ideal world. Rock on Mandy - I never thought I'd ever wanna blend oysters, but here I am :P

    I have found a big difference in the taste of west coast oysters vs gulf and east coast USA oysters. The best in my opinion are VA to FL east coast oysters, followed closely by FL to TX gulf coast oysters. Blufton, SC ranking as the best and smallest of the ones available to me. Love your videos!

    Why do we need to add sugar! Very traditional Chinese recipes did not have sugar in it ! Plz let me know if I can use something else instead this huge amount of sugar

    I just tried making this, the sauce is so rich in oyster flavor and delicious!! Thank you so much! however....
    One friendly reminder: Taste taste taste!!! espeically before seasoning.
    noticed all salt have different saltiness, I used some fine iodized salt and only had to add 3 tea spoon of salt at the end to make it as salty as store bought oyster sauce. Please taste before and during seasoning and don't blindly follow recipe!

    Thanks a lot Mandy! It is amazing how much research you did and the information you were able to obtain about the making of commercial oyster sauce. Then you must have spent a lot of time creating your own and superior recipe. You really impress me, and I always wondered what goes into oyster sauce. Based on your earlier recommendation, I already use the Lee Kum Kee Premium Oyster Sauce that lists oyster extractives as the first ingredient. When I have time, I will use your recipe to make my own oyster sauce and look forward to comparing it to the other one.

    i think you might be able to can it, if you rinse out that lee kum kee bottle and pour the hot oyster sauce into it. that way you dont "waste" freezer space and still be able to have it for a long time. i've done this with strawberry syrup from jam making sessions.

      I don't think you'll succeed in freezing it, at least not in a conventional freezer. There's just too much sugar and salt in the sauce. It will probably only start to freeze somewhere below minus 30°C (-22°F).

    The Uncle Roger and MSG reference 😂! Oyster sauce is one of my favorite seasonings. I appreciate that you gave detailed instructions and explanations.     你可以不用牡蠣 ..用小魚 蝦殼 貝殼+菜+剩麵...放在保溫杯 發酵 味道很像
    有點像 廣東人作的臭豆腐 滷水
    因為 你是要作 像牡礪的味道 用料不能過多
    過多 變味了
